I love quacamole in my veggie subs...especially the ones from Quizno, but damn those are fattening!

I don't think that they would come out as well on a frying pan.....you could try it.
I sliced them thinly and then brushed them very lightly with olive oil and put them on high heat at first and then medium heat on the roasting pan.
(Next time I will use regular vegetable or corn oil as you really only need a tiny bit and the olive oil has a very, very low smoking point. Even with the exhaust fan going full blast it was pretty smoky in the house.)

So I got creative with ingredients last night......

I had some left-over roast chicken that nobody wanted to eat in its original form. I sliced up the breast meat in thin layers and used panini to make a sandwich. Inside I put spicy homous as paste, roasted red peppers, a tiny bit of mint/corriander chutney and some goat cheese.

I think he mumbled that this sandwich was delicious. :D

Ooh that does sound yummy....this panini. I used to love at work had thin slices of roasted eggplant, spinach, roasted red peppers, jalapenos and fresh mozzarella .....they spread pesto mayo on both sides.....and it was delicious....I think they add balsamic dressing sometimes......yummmy
