Your menu is fine. If a biryani needs salan then it isn't a good biryani. I only see salan when it's a two dish option with biryani and one salan and roti.
Biryani does not need to be bad to be eaten with salan. A good salan, like qorma or achari gosht, just adds another layer of flavor, and many people like that.
Biryani doesn't require salan it already has a salan in the oayers and I imagine a salan over the top would ruin the biryani taste. I am making biryani tomorrow but also kofta salan to eat with roti for anyone wanting roti. Your menu is fine Unless you know someone doesn't like rice but who doesn't like biryani!!!

Bhagaray baingan & mirchi’on ka salan are traditional accompaniments to biryani in hyderabadi menus…but these are more like an relish, not poured over biryani like a runny salan over rice lol.
