how do I make them round?
for some reason they always turn out in some other figure but never round.

Re: roti
i used to wonder that when i was younger and used to watch ami make perfect round rotis that rotated while she rolled them out i thought...WOW.
but after many years and a lot of practice, i have mastered them!
the art is in the ball of dough, it must be perfect and round and must not stick to the pin
Re: roti
^ thats true. but also when your rolling them out with the rolling pin, you have to keep the roti rotating so it stays round. you do this by putting more pressure on one side of the rolling pin as you go up and then put pressure on the other side when you're rolling down. this way the roti rotates and stays round.
dont make it too big at this stage as you'll have trouble keeping it round to get to the tawa. pick it up and do that whole hand clapping thing (if u dont kno what i'm talking bout then will explain) but keep rotating the roti at this point too... also, if you have put on a lot of dry atta it usually good to be firm at this point to try and shake off as much excess so that the roti's arent dry.
and then just place it on the tawa. it takes a while to get them perfect but it'll be worth it. my mum can make the huge round roti's doing it this way... i can only manage normal sized ones.
oh and of course, make sure your atta isnt too soft.
Re: roti
kwazy kitty; i couldnt have said it better meself!!!! i just couldnt put all that in to words
WELL DONE!!!!!(clapping)
Re: roti
thankyou blush
Re: roti
thats ok; but the question is did the roti inflate (as ami says)!
Re: roti
^lol
i have a method to insure that happens too actually...
what you do is after placing the roti on the tawa you let it only just get dry on that side... you can see this happen from the topside of the roti from the slight colour/texture change. then turn it over and cook that side properly - but dont use a cloth to press down on it as i kno some ppl do.
when that side is cooked then take the tawa off the fire and saik the roti on the side which wasnt cooked propery (the 1st side) - it should fluff up. you can also turn it around and sake the cooked side for a short time too but be careful as i've made holes in the roti many times this way and tho this isnt bad, the bloody hot air coming out of it is!!
Re: roti
yeah my mum tells me to saik the roti on naked fire too!!!!! interesting!
Re: roti
Who says it has to be round anyway?
Re: roti
yeah actually why cant it be square like parathe and triangle!!!
but then we wouldnt be abe to clap it on our hands(as Kwazy Kitty said) then Brit chick!!!!
Re: roti
I cant clap it in my hand, it just collapses.
Re: roti
^practice with hard dough and smaller ritis until you get used to it......... itll come to you in time. dont worry about.... just think of the years and years and years and years and years you'll be doing this after a while itll come naturally!
Re: roti
Must do it with top half of your palm and it will not happen. Or try doing it slowly with one palm facing up and othe other with roti bring it on top with palm facing down. like this ![]()
Re: roti
oh sorry, but i think after i eat them, they turn into some other shape, not round or rectangular. oh im so hungry.... i gonna go eat some roti now.
Re: roti
if you dont think its cos your atta’s too soft then it could be that your doing this part too slow. dont give the roti a chance to go limp in your hands.
Re: roti
you know.. i had square parathe for the 1st time last yr in Pak and i remember being kinda surprised… my cousins make them square, but we make them round.
Re: roti
Shouldn’t you be applauding after you have eaten?
Re: roti
kwazzy kitty:
i always make my parathe square and they r so crispy and buttery..... but it took alot of practice !!!
Re: roti
I made round paratha and also I made square shape roti, like make round roti inside I use oil then fold in square cook it then on outer side lightly oiled roti and fold in aluminum foil, these are best for breakfast.
Before marriage I made only 4-5 roti, when I was married I cooked above ten and some time I made above fifteen in breakfast :( too diificult job to do this in summer but this made me good in making roti, here when I invite more families sometimes I made chapati at home like 18-20 or some times lots of parathas for brunch party.
Practice makes a man perfect.
