Buy a whole chicken with skin, carefully separate the skin like a cover without detaching it completely, prick thoroughly with a fork in the meaty part. I stab with a knife in some places too. Mix 1.5tsp salt+1tsp black pepper+2 tbsp lemon juice+1tbsp gg paste in a bowl and rub this onto the chicken nicely. rub,rub,rub for 304 minutes;under the skin and over it too. Cover with a cling film and refrigerate overnight. I buy 3-4 whole chickens and marinate and freeze ; thaw and bake when needed.
Preheat the oven at 180 celcius for 15 minutes. Meanwhile, you’d need any used tin of a size/diameter on which you can make the chicken stand when the tin is inserted in the hollow part of the chicken.Place the tin with the chicken sitting vertically on it in a baking dish. take 1/4 cup vinegar, pour on the chicken, cover tightly with an aluminium foil and bake for 2 hours in the gas oven.
After two hours,remove the foil and cook under broiler for 10 minutes to give colour on the top part
Mix 1 tsp chaat masala+1/2tsp zeera powder+1/4tsp garam masala powder. Sprinkle this with freshly squeezed lime juice before serving.
*** If you dont find a tin, cover the chicken with more aluminium foil on the base so when pressed, it stands vertical. This is most important to make it yum,soft and juicy yet tender. I have tried baking it laying in the dish instead of an upright position and it turns out dry in this case !
