Like every year , we celebrate Ramadan with a zeal. This year , we will have a new iftar recipe to share with you every day. I will start with my recipe of the day , that is , first of Ramadan :

*Filo Pastry Bites *


Fresh Filo Pastry ( get them from Asda )
Mince Meat
Shredded Cheese
Oil

Cut the pastry in five inch squares. now take three leaves and start layering them, bask one with oil, place the second leaf on top, then oil again then the third leaf, then keep aside. Layer up as many Bites you would like to make.

Cook Keema the usual way, ( fry onions, then add ginger and garlic, spices ,then keema.. fry until cooked, add some peas if you like them , some tomato paste , let it cook some more , add corriander and green chillies ) make sure its dry and not too oily or watery.

now take the layered filo and fill it with the mince meat, sprinkle cheese on top and then fold the sheet in half and lightly tap the ends close using some oil.

when all the filo's are done. Preheat the oven to 200 degrees, place filo's in the baking tray and start baking them. you need to keep a close eye coz they brown very quickly.. you just need 3-5 minutes. when light brown, if you like more cheese , you can sprinkle some on top so it melts , otherwise you have enough cheese in the pastry .

Very nice recipe CB, I'm going to try thai spring rolls tonight, my frend gave the recipe, they don't require frying.

Anyone have any other recipe's that don't require frying? I'm made samosa filling, but which pastry will it work better in? Puff pastry or filo pastry?

Ingredients:
White lentil 200 gm (soaked for 4 hours)
Crushed red pepper 1 tsp
Ginger ½ inch piece
Salt 1 tsp
Baking powder 1 tsp
White cumin 1 tsp
Oil for frying
Yogurt 1 kg
Caster sugar 5 tbsp
Water ¼ cup
Salt ¾ tsp
Chat masala 1 tsp
Chili powder ½ tsp
Coriander leaves 2 tbsp
Green chutney as required
Sweet chutney as required

Method:
Grind lentil with ginger, salt, crushed red chili, cumin and baking powder
with ¼ cup water, remove and deep fry bhallas on medium flame till golden.
Drain and soak them for 5 minutes in hot water, remove and lightly press.
Beat yogurt with, caster sugar, water, salt.
Spread ½ yogurts in a serving platter arrange bhallas on
it pour remaining yogurt on it, drizzle green and sweet chutney,
garnish with coriander, chili powder and chat masala.

i know thats cheating , but i use shan dahi bara mix , believe me they r good :) hth

lol ! that’s not cheating :smiley: you pay for those bara mix naa …so it’s not cheating and I also use masala dabas for many dishes they are perfectly fine to use :k:

^ oh thank you diamond. i think i ll try the recipe though its too much of work. i thot it must be as easy as making baison for pakoray and start frying :smiley:

^ no fairytale it's quite alot of work. We here (in karachi) get fried barays and then for the aftaar we just soak them in boiling hot water for 15-20 mins (depending upon the quality of baray) and then mix them in dahi.....easy....I don't know where you are but that's the easiest way of making dahi baray.

I made up a Recipe: Ballay… It works for me .. you guys can try it and its fairly quick :

Soak one cup Mash daal ( white daal ) for two hours
Drain it , Put it in the blender , add half tsp salt, half tsp zeera, half tsp garlic, half tsp soda bicarb , then mash it into a fine paste
Fry them into small balls ( like pakoray ) and keep them aside.

Right before iftar, take some luke warm water in a bowl and add one tsp salt to it, then add ballas and keep them dipped for 10 minutes. They must absorb as much water as they can , werna they will absorb all your youghurt :naraz:

now mix some finely chopped green chillies and fresh corriander in the yoghurt. leave it for a minute , so the taste can get infused into the yoghurt. Drain the balla’s from the water and add them into the yoghurt. then sprinkle some red chilli powder, some garam masala , some chat masala and its ready.

Finely chop some onions, some fresh corriander, tomatoes and place them separately in a plate so that anyone who likes to add what ever , can do so in their plate.

For Imli chutney, soak some fresh imli in half cup water for 10 minutes. Start boiling it, add quarter more cup of water … add two tablspoons sugar, half tsp salt, half tsp red chilli powder, half tsp zeera … cook for 10 minutes or until your imli sauce has thickened a bit. Waise i dont bother thickening it , coz i dont get fresh imli here … so I use the tamarind paste , which is paste like and doesnt have much fibre but tastes awesome.

Finally, if you have any springroll sheets frozen , take one out, fry it and then crumble it into pieces and sprinkle it on top of the baray for that extra effect :@:

chicken samosa filling:
take a pan add oil ,onion chopped ,green chillies chopped fry till soft keep a side
then again add lil oil add another big onion chopped ,green chillies chopped fry fry till little brown add zeera, crushed garlic, add minced chicken now fry well,,, no lumps then add lil yougart fry add salt,crush red chilli ..cook till done then flame off add the onions we soft before ,coriander,lil lemon juice,cool and fill :) as required

Thanks. I got a lot of boneless chicken but no chicken keema. I think I can just chop it up myself. Recipe sounds good. I am going to try it.

u can boil chicken n then chop it in chopper machine...........thn follow the rest of the recipe

let me share a recipe of potato n cheeze sticks...........will upload pics soon in iftar pics thread
boil potatoes add salt,blackpeper n minced chickn mix it well
slice the cheeze in stick form n apply potato mixture all around it in the same shape
dip in egg thn in bread crums n thn deep fry the sticks
yummy potato n cheeze sticks r ready.........

Peanut chicken toast:

200 gm boiled shredded Chicken
Bread slices 3
Chopped coriander
Salt
Black pepper
Cumin seeds half teaspoon
Spring onion 3 tablespoons
Peanuts crushed coarsely 1/2 cup
Cornflour 2 Tablespoons.

Mix well chicken, 1 tablespoon peanuts, coriander, spring onion, cumin, black pepper and salt. Put the mixture in a chopper for a minute so it turns into a fine thick paste. Spread the paste on bread slices and cut them into small shapes of ur choice( I make Triangles). Now Freeze them for 30 minutes so the mixture sets well. Sprinkle Crushed peanuts on top of the chicken mixture and squeeze with hands(dont be too generous, you only need the crunch). Make a paste out of cornflour which is neither too thick nor to thin. Dip each slice into the paste and deep fry.

STUUFFED CHEESE AND BUTTER POPCORNS

half kg chicken mince
1 teaspoon black pepper
1 teaspoon salt
half teaspoon garlic powder
one small onion chopped
one green chille chopped.
mix all together very well leave for 1 hour then
make kebab shape round and then add a littile piece of butter and mozrella chesse in the center roll in small ball .
the butter and mozeralla pieces should be not too big .
now take plain flour mixture add some water to make paste like add little seasoning in it roll in the flour mixture then in bread crums and deep fry for aroung 10-15 mins on medium heat so it can be cooked well and serve .

i made the dough myself didnt used the sheets salt
for dough i added salt,oil n lil water in flour...mix it well
add more water little by little n knead into soft dough
keep this in a wet cloth for 15 to 20 mins
then roti ki tarh bail le round shape mei
cut into halves
each half vl make one samosa
thn make the dough in shape of cone n add the filling n seal the 3rd side
for sealing the sides of samosa mix flour in water n apply it
