Add oil, zeera fry little. and tomatoes, salt, laal mirch powder. bhuno. add 1/2 cup water cover and cook until tomatoes become soft, and hari mirch bhuno until oil comes out. add boil kalay chanae bhuno on high heat. add cilantro. done serve with chat masala

I will start with my recipe of the day , that is , first of Ramadan :
*Filo Pastry Bites *
Fresh Filo Pastry ( get them from Asda ) Mince Meat Shredded Cheese Oil
Cut the pastry in five inch squares. now take three leaves and start layering them, bask one with oil, place the second leaf on top, then oil again then the third leaf, then keep aside. Layer up as many Bites you would like to make.
Cook Keema the usual way, ( fry onions, then add ginger and garlic, spices ,then keema.. fry until cooked, add some peas if you like them , some tomato paste , let it cook some more , add corriander and green chillies ) make sure its dry and not too oily or watery.
now take the layered filo and fill it with the mince meat, sprinkle cheese on top and then fold the sheet in half and lightly tap the ends close using some oil.
when all the filo's are done. Preheat the oven to 200 degrees, place filo's in the baking tray and start baking them. you need to keep a close eye coz they brown very quickly.. you just need 3-5 minutes. when light brown, if you like more cheese , you can sprinkle some on top so it melts , otherwise you have enough cheese in the pastry .

Isn't is hard to boil kalay channay. I soaked channay in water overnight and then boiled them in pressure cooker for at least an hour.. but errr :(
I saw a good spicy kalay channay recipe on tv yesterday by chef adeel. I'll post it by tonight.

Recipe for the bread rolls I posted in the other thread:
This will make around 15-20 bread rolls....
1: Boil 3 medium size potatoes
2: Boil 3 medium size eggs
3: In the mean time, cut off the sides of the bread slices. Don't throw the sides away, use them to make bread crumbs.
4: Mash potatoes. Mash eggs with a fork (but not too much... into small pieces)
5: 1 tspoon of salt, 3/4th tspoon of black pepper, tiny bit of red pepper OR green pepper cut into small pieces.... I also added a tiny bit of chaat masala... You can flavour this stuffing as you like... You can even add chicken/sweet corn/peas etc in this...
6: Mix everything together. Turn on the fryer.
7: Make sure your hands are clean. Wet your hand and press on the slice of bread (especially from the edges).... someone in the other thread said that the bread just keeps breaking for them.... thats because it needs to be pressed slightly with a damp hand...
8: Place a heaped tablespoon of the stuffing on one edge of the bread... roll the slice of bread and press it firmly between the two hands so it wouldn't open while frying.... damp ur hands again if u need to but be careful about making the roll too wet... It shouldn't be wet, it should be slightly damp...
9: Do this for as many bread rolls as you'd like to make.
10: The oil should be hot by now. Beat two eggs in a bowl. Dip the bread rolls in the eggs. Then dip them in the bread crumbs and fry them until golden brown. Simple as that!
Again, you can modify the stuffing as you like.... You don't even have to fill it into bread rolls... you can just make little round balls from the mixture, dip them into eggs & bread crumbs and fry them like this.... You can also make sandwiches from this mixture using a sandwich maker...

Ingredients: White lentil 200 gm (soaked for 4 hours) Crushed red pepper 1 tsp Ginger ½ inch piece Salt 1 tsp Baking powder 1 tsp White cumin 1 tsp Oil for frying Yogurt 1 kg Caster sugar 5 tbsp Water ¼ cup Salt ¾ tsp Chat masala 1 tsp Chili powder ½ tsp Coriander leaves 2 tbsp Green chutney as required Sweet chutney as required
Method: Grind lentil with ginger, salt, crushed red chili, cumin and baking powder with ¼ cup water, remove and deep fry bhallas on medium flame till golden. Drain and soak them for 5 minutes in hot water, remove and lightly press. Beat yogurt with, caster sugar, water, salt. Spread ½ yogurts in a serving platter arrange bhallas on it pour remaining yogurt on it, drizzle green and sweet chutney, garnish with coriander, chili powder and chat masala.
ps. you do not need baking powder when you use white daal.

or sprinkling some masala on top of em… or using garlic bread instead of plain bread just to add that extra flavour that I thought was lacking…

Recipe of the day:
Chinese Pakoray
Finely shred cabbage and stir fry it in a bit of oil. Keep aside
finely chop Capsicum and stir fry in a bit of oil, keep aside
Stir fry some peas and sweet corn , and keep aside
Stir fry some spring onion and keep aside ( this ingredient is optional )
Now add all the stir fried vegies back in the pan and add one and a half teaspoon soya sauce, one and a half tsp vinegar, one tsp red chilli sauce, one tsp fish sauce (optional) , half tsp ajinomoto , salt to taste , black pepper to taste . Stir fry for a minute and keep aside .
Peel a potato and shred it finely. Add to the vegetable mixture. If you like your pakoray spicey , chop a few green chillies and add to the mixture. Add 4 tablespoons of maida and one egg .. and start mixing the mixture .. keep adding maida until you get the pakora consistency ..
Fry like the usual pakora's ... they taste different and yummy.

Chicken Biryani.... maida is all purpose flour? Or is it besan....
oh and I tried the recipe you posted on naans yesterday and it was really good... but came out more like arabic naan.... not tandoori naan.... but still yummy :) Thanks!

Chester , tandoori naan is different .. I havnt made them yet ... but if you mean the stretchy kind of naans , well they need a specific temperature which normally our home ovens dont have :( ..

ps. you do not need baking powder when you use white daal.
no Lusi you need a pinch of baking soda and that is all. If you are taking one cup of white daal (that's how much I take and it makes 14-15 med size pakoras) then 1/2 tsp salt and pinch of baking soda to add when you put the daal in the blender.

I never put baking soda and they come out fine. Once my mom said to me that white daal itself is like baking soda lol....
anyway pinch is much better but i think 1 tsp is too much. :)

^^^ I don't either. I saw maash ki daal kay pakoroon ki recipe on tv several times. No one puts baking soda in it. Without baking soda they turn out perfect.

I learned this recipe from my mother in law and i have been making it ever since. my husband loves it so i thought i would share.
Date Shake
1 cup pitted dates, coarsely chopped
1 quart skim milk
2 pints french vanilla ice cream
1 teaspoon grated fresh nutmeg
Place coarsely chopped pitted dates in a blender. Add 1 cup cold skim milk and french vanilla ice cream. add more milk or ice cream for the consistency you like in your shakes.
