Ramadan Recipes

beef finger rolls

Serves: 6 people
Calories: 1200

Ingredients:
1lb-mince beef
1 medium onion(finely diced)
1 medium tomato(seedless finely diced)
1/2 tsp crushed ginger and garlic
1 tbsp bay leaf and cumin seeds powder
1/3 tsp baking powder

3 tbsp bread crumbs
2-3 green chillies crushed
salt,red pepper and crushed corriander powder to taste
green corriander leaves finely chopped
one egg

How to Prepare:

mix well all the above ingredients and make them into finger shape long rolls with the palm of ur hand at least 3 to four inches long because they will shrink during frying.if u like u can alsobakeit in the oven.on the baking sheet place the rolls and heat the oven to 300 degrees and put then for about 15 to 20 minutes u dont have to over cook them their colour should not turn brown.serve hot with nan and raita makes a beautiful party dish.and belive me it is extremely delicious.

try the kulfi recipe on BJ's cooking. It dosent involve ne cooking and comes out amazing.

I made this Kenyan fried dough called Mahamri:

2 cups flour
3 tbsp sugar
2 tsp yeast
1 egg
2 tbsp oil
milk to knead
oil for frying
1/4 tsp of ground cardamom seeds+cinnamon
pinch of salt

Make sure all the ingredients are at room temperature. Mix together all the dry ingredients including yeast. Now beat the egg, add oil and milk and knead the flour mix with it. Leave for a few hours to rise. Roll out onto small round shapes to just a little more thicker than a roti. Cut into triangles and fry in oil until golden brown in color. Serve with whatever. You can sprinkle powdered sugar on top if you want or brush with honey.

I belive in Kenya this is usually served with kahwah/chai/tea.

My husband just made the following variation on lussi:

yogurt (french vanilla made with whole milk, organic)
sprite (berry remix)
frozen fruits (papaya, passionfruit, mango, pineapple)
a teaspoon of sugar

all blended together for two tall glasses of something delicious

Fried Noodles
Ingredients
275g egg noodles
one boneless chicken breast-skinned
one red pepper cut in medium size cubes
one green pepper cut in medium size cubes
four medium size carrots cut into thin strips
2eggs(optional) - prepare a simple omelet and cut into thin strips
50g mushrooms thin sliced
one pack spring onions
2 tbs soy sauce
2-3 tbsp of normal cooking oil for frying
2tbsp of sesame oil
2 tbsp fresh ginger and garlic paste
one pack chives

Preparation
1) Cut the chicken breast into thin strips and marinate with the ginger and garlic paste and salt for half an hour

2) Cook the noodles in boiling water according to the instructions on the packet. Drain and pass quickly under cold water, then mix in one tbsp of oil.

3) Heat 2-3 tbsp of oil in a preheated wok and stir fry chicken for about 2mins. Remove and set aside.

4) In the same wok, stir fry all the vegetables in separate batches, and set aside.

5) Heat the wok and start mixing a small portion of noodles chicken and individual vegetables, one at a time. Add soy sauce and sesame oil while mixing everything together. Empty in large serving dish and start another batch.

Fried Fish
Ingredients

1) 2lb white fish
2) 2tbsp coriander powder
3) 1tbsp cumin powder
4) 1tbsp paprika powder
5) quarter tbsp amchoor
6) quarter tbsp ajwain(powder)
7) 5tbsp ginger and garlic paste
8) salt to taste
9) 1tbsp turmeric
10) 3 cups of oil
11) A bunch of green coriander leaves

Method
1) wash and clean fish ( all scales must be removed)
2) Mix all ingredients (make a paste)
3) MIx with fish and marinate for half an hour.
4) Heat oil.
5) Fry fish slowly till golden brown
6) sprinkle with green coriander
7) Ready to serve!!!

I make similar tuna kebabs, but i do them without breadcrumbs, just dip it in egg. I will try them with bread crumbs next time, see how that comes out. Also I typically use 1 can tuna for 2 medium boiled potatoes. We also add typical kebab masala..like chopped coriander, anardana, lots of chopped onions/scallions, laal mirch, and it also comes out very yummy.

Kalay Cholay Recipe

Soak 2 cups of chana over night.

Heat 1/4 cup of oil in pressure cooker, then add 2 medium sized thin sliced onions, fry till soft, then add ginger garlic paste 1 table spoon. then add soaked chana in it. Add Red chilli powder (up to taste), cumin powder 1/2 tsp, garam masala powder 1/4 tsp, salt(up to taste), ground black pepper 1/2 tsp, mix it and add water enough to cover the chana. When water starts to boil close the lid of cooker and cook for half or quarter of an hour, then turn off the heat, when it cools open the lid and again turn on heat and dry the moisture in chana(bhoonified), kala chana is ready.

If want sprinkle cilantro and green chilli over it. Also use lemon when serve.

This was amazing...I tried last nite and all loved it. Had never heard of such a combination. Thanks...altho I did use sugar and some evaporated milk for thickness.
