What are some different ways to cook tilapia fish…specifically teh desi fried fish? neither my mom nor my MIL make it so i can’t ask them… also, non-desi recipes are okay as well…

I've made it a couple of ways. First is simple fried tilapia. Dip it in egg then coat with breading. For extra flavor, add spices or grated cheese to the breading. Fry in oil till browned on both sides and fish is flaky.
Or coat with curry powder and either fry or bake it. If you bake it, put small pats of butter on top. I like this better actually but the breaded fried was very popular whenever we had guests.

When I bake it in the oven, I just kinda "wing it" lol! I put the oven at 400 degrees, put the fish on a baking sheet and bake it for maybe 10 minutes each side. I open the oven and check it every few minutes. It should get lightly browned at the edges when you use butter and the fish will get totally white and will flake with a fork, thats how I know its done. Its helpful to spray the cookie sheet with Pam cause the fish can get stuck.

when cooking it on the stove u can keep it on medium to medium high flame ....i cook it uncovered...and just a couple of minutes on both sides...(depending on the thickness of the fish piece).....and if u will use a non stick frying pan with a tiny bit of oil it should not stick....:)
oh and if u r frying up besan coated fish,it might take a bit longer and require more oil...me thinks so....:)

use shan lahori masala for desi style fish!! it's really good.
coat it and fry in little oil on med heat. Tilapia cooks quickly and breaks easily so be sure not to flip it more then needed.
that's it! easy and tastes great :)

sara gimme a few days and i'll look up my recipe for fried fish.. i make the paste at home, but can't remember the ingredients off hand.
if u want salan, i've a coupla different recipes.. one's a coconut curry base, the other is a hot n spicy chilly base.
fish cooks very quickly, depends on the thickness of the slice, but generally within 5 mins.
if you're baking it, it will take abt 20 mins i should think.

Okay namkeen i'll wait :) Oh in the meantime... i rea dit somewhere that u can't defrost fish the same way you defrost regular beef or chicken? i just put the meat/chicken in the fridge and let it defrost overnight...

Fried Fish: Take half packet Shan Lahori masala. Add garlic paste and some besan and 3-4 Tbs oil. Mix and marinate tilapia fillets for half hour. Fry on medium heat, uncovered until both sides are golden. Turn softly otherwise fish will break. Use a good quality non stick frying pan.
Blackened Fish: Use Zartrans' blackened fish mix (available in any grocery store). Sprinkle fillets with enough seasoning to cover each side. Then coat with melted butter. Heat oil to low-medium, add fish fillets, turn gently. Fry until darkish on each side.
Quick Fish Masala: Cut 3-4 tilapia fillets into 2 pieces each. Add 1 tsp. methi seeds, 1 tsp. mustard seeds to hot oil. Let them splutter for few seconds. Add one large sliced onion and fry until pinkish, add crushed garlic and 1 cup chopped tomatoes. Then add salt, red chilli powder, haldi, red chilli flakes. When oil separates from mixture, add fish. Cover and cook on low. Stir occasionally, gently. When almost tender, sprinkle 1 tablespoon lemon juice, chopped cilanto and 4-5 green chillies sliced lengthwise. Cover and cook for 2-3 more mins. Done.

sara, here's an easy recipe for salmon filet:
apply ginger-ginger-salt paste to the salmon and marinate it abt 30 mins. then stick it in all purpose flour, shake off excess flour, and shallow fry it til it's cooked. to test done-ness, stick a knife/fork into the fish, if it comes out clean, it's done. take out the fish onto a plate. make a mixture of red chilly powder and amchoor powder in a little oil from the pan, abt 1 tsp oil (adjust red chilly powder to ur spice tolerance) and apply this mixture to the fish. done! serve with rice pilaf/zeera rice.
here's the fried fish recipe i was talking abt earlier, it's a bit of work, but it's delicious:
**Ingredients:
**Fish steaks, fresh coconut, green chilies, saunf, ginger garlic paste, amchoor powder, haldi, dhaniya (coriander) seeds, red chili powder.
Directions:
Grind the coconut, green chilies, saunf, ginger garlic paste, amchoor powder, haldi, dhaniya (coriander) seeds, red chili powder to a smooth paste using as little water as possible.
apply to fish steaks and let it sit for atleast 20 mins.
Using a little water, make a paste of soji/semolina and rice powder mixed with red chili powder, dip the fish steaks in this mixture and then shallow fry. the soji/rice will render a crispy exterior.

Ingredients
36 ounces salmon steak
2 tablespoons olive oil
2 tablespoons lemon juice
1/2 cup onion, chopped
4 garlic clove, chopped
1 tablespoon fresh ginger, chopped (10 slices or so)
2 jalapeno, chopped and seeded
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon turmeric Directions
In the work bowl of a blender or food processor, combine all the ingredients except the fish. Blend until a fine paste is formed. Scrape into a bowl.
Add the salmon steaks and mix well to coat the steaks on both sides. Cover and refrigerate for at least 2 hours.
Heat the barbecue or broiler to high. Place the salmon steaks on the grill or 4 inches (10 cm) away from the broiler element and grill 3-4 minutes on each side for medium, brushing with the marinade. Serve immediately.
