awww Kinzz … ok here is my recipe …

put two cups keema in a large strainer and pour 3-4 tbsp vinegar on it , mix it lightly and leave for 15 minutes … then give it a light wash under the water , like just until the blood is out of the meat … and leave it back for the water to drain out …

Now, chop or coarsely blend one large size onion or two small ones … and in a pot , add the onions, keema and half cup water … cook this covered on medium heat … after 10 minutes of cooking , add whole spices like three pieces cloves , black pepper, one stick cinammon … let it all cook through until the water has dried and you notice that the keema has let out oil …

If you cant see the oil , dont worry , just add two tbsp oil and start the bhoonofy process … do it for at least 15 minutes … then add one tsp garlic paste … after a minute add in one tsp ginger paste … keep bhoono’ing it .. if it sticks to the pan , give it a splash of water and continue bhoono’ing … when the oil totally separates , add in quarter cup water .. and immediately after add in the following spices :

  • One and a half tsp salt
  • One and a half tsp red chilli powder
  • half tsp haldi powder
  • half tsp garam masala

cook it all for five minutes .. meanwhile , blend 3 medium size tomatoes in a blender and add it to the keema … keep bhuno’ing it , until the tomatoes mix well with the salan … sometimes for added kick , I add one tablespoon of Shan Qorma powder or Achari gosht powder … jut one tbspoon , no more … at this stage you can also add one cup water if you like the keema thinner …

and if you want to add potatoes / peas/ simla mirch , add them at this stage … and cook them on dum … ( dum means , cooking on the lowest heat setting , while keeping the pan covered ) .. finally add corriander and green chillies and after two or three minutes of steaming .. you are done :@:

TIPS :

The taste of qeema depends on how long you bhoono it for without burning it …

In the end , definitely dum the keema so the spices and vegies mix it well with the keema …

  • Qeema - 2lbs
  • Onion - 1 medium. finely sliced/chopped
  • Ginger Paste - 1tsp
  • Garlic Paste - 1tsp
  • Garam Masala - Whole (4-6 black peppers, 4-6 cloves, 1 large bay leaf)
  • Salt - 1tsp (or as per taste)
  • Red Chilli pwdr - 1/2 tsp (or as per taste)
  • Turmeric pwdr - 1 tsp
  • Coriander pwdr - 1/2 tsp
  • Dried whole red chillies - 2-3
  • Yogurt - 2-3 tbsp
  • Tomato - 1 large - diced
  • Potato/Green Peas (optional)
  • whole green chillies - 2
  • Cilantro

  • Fry onion to golden in couple of table spoon of oil
  • add items in blue and stir 3-4 times
  • add qeema and bhoonofy the qeema well
  • add everything in red and bhoonofy for 3-4 more minutes
  • add items in green, mix, cover and cook on high heat for couple of minutes to make tomatoes soft
  • now mix it, add half cup of water and leave on low heat to tenderize
  • (optional) if you are using potato and/or green peas, add that after 10 min of previous step
  • when qeema is tender, add whole green chillis and cook for 5 more minutes.
  • sprinkled chopped cilantro

enjoy and give me duaeen :slight_smile:

PS: Key is bhooonofy it without burning it as CB has mentioned. Keep a cup of water handy during bhooonying process and keep on putting a tbsp of water during bhoonofying process to keep it from jalling

I am official qeema cook of the household. Although I understand the chalaki of my begum “qeema tu aap banaeen, aap jaisa banatey hain wo mujh sai banta hee nahi even though I follow the recipe”, but I cook it anyway as its my fav dish :slight_smile:
