However, as hard as it has been to come up with one single winner, I have to announce that when someone serves me makki ki roti and sarson ka saag, I cannot look at anything else. SO I guess at this time, I should be visiting el topo…hope you live around my area because I’m really hungry!

mostar, how do you make your firni? I haven't ever made it, but my mother used to make it quite a bit; and I got all nostalgic for it when I saw it on your menu.
Its very easy and quick - soak 125 grams basmati rice for half an hour and then blend them with one litre milk, 4 tablespoon sugar (do +/- as per your likings), seeds of two cardemoms and half teaspoon kewra water. Cook all these until you get a lava like stuff and then pour in your bowls and garmish with dry fruits.
I think all the menus were fantastic and if I had it my way, I’d visit you all for dinner, but the mods of this forum wanted me to pick just one so I went with my poonjabi tastebuds :hinna:. I love you all

For the saag, I chop green mustard leaves, fresh spinach, collared greens, cabbage, (and sometimes broccoli and brussel sprouts too) and boil them in a large pan, mixing regularly, until most of the water has evaporated and they are mushy. To this, I slowly add cornmeal flour until the texture of the mush becomes smooth. Then it stays on a low heat for ages, until the cornmeal gets properly mixed/cooked, and the texture becomes as I want it; properly consistent and smooth like traditionally punjabi style. In a separate pan I do a turka of onion,spring onion, green chilli, ginger, garlic, and tomato. This eventually gets added to the saag, and it stays on the gas a little longer for it all to meld together.
So, yeah, it's not hard, just terribly time consuming and mixing the greens properly is a pain on the arms.
