shan masala! just add 1 more cup chana dal and 1 tsp extra salt.... dont use the entire packet unless you want ur mouth on fire. :D

Haleem (Chef Zakir)
This recipe is for ½ kg good quality meat
Daals
• 50g wheat soaked for about 30mins to 1 hour
• 25g chana dal soaked for about 30mins to 1 hour
• 25g red masoor dal soaked for about 30mins to 1 hour
• 25 g white mash dal soaked for about 30mins to 1 hour
• 25 g yellow moong dal soaked for about 30mins to 1 hour
• 2tsp haldi
Haleem Quorma
• ¼ cup oil
• 1 medium sized onion chopped
• 3 medium sized tomatoes chopped
• 3 green chillies slit in half
• ½ bunch dhanya
• 4 tbsp ginger garlic paste
• 2tbsp red chilli powder
• 1tsp garam masala powder
• 1tbsp cumin powder
• 1tbsp coriander powder
• 1 tsp haldi
• Salt as required
• Water as required
Method:
Drain the daals and put then in a pan of water together with 2tsp of haldi. Leave to boil. Cook uncovered till it has boiled. Stir occasionally and remove the foam that forms on top. When the daal has softened cover the pan and leave to cook.
In a separate pan, put oil along with the onion and mix well. Brown this slightly, be careful as the brown onion affects the colour of the salan. When it has slightly browned add ginger garlic paste and the meat. Us ko bhoonein. When the water of the meat dries add the tomatoes and the green chillies. Then add red chilli powder and haldi, mix well. Us ko bhoonein and then add salt, garam masala and about ¼ cup water and leave to cook for a few minutes. When the water has dried, add 2 cups more of water or until the botis are covered and then put the lid on and leave to cook.
When the daal is done, use a utensil called ‘ghootna’ or any other thing that would mash the dal to blend it or mash it DO NOT add water to the daal. To the quorma add the coriander and cumin powder and some fresh coriander and cook. Separate the meat from the gravy in another dish and remove the meat from the bone and shred when a little cool. Reduce the quorma gravy further.
Add shredded botis to the daal mixture and add a little of the reduced gravy, and blend it further with the same ghootna for about 15 minutes add the rest of the gravy till it is resha resha and blend well until the look of the haleem is achieved and meat is shredded.
Dish out and serve.

I made haleem from national foods .... all I have to say is haleem made from scratch is soooo much better... I just couldn't get rid of the cardboardy smell ... tried everything but nothing worked. Any other recipes for haleem than chef zakir.

I've alwayz made haleem using the Shahi haleem Mix from Shan and its just sooo awesome.. no one can ever tell the difference.. i just add another teaspoon of salt and i grind half of the haleem.
Other than that.. my MIL taught me how to make haleem from scratch and it tasted amazing!~
Take 2-3 onions - slice them thin and put into oil and brown them.
Add chicken and all masalas' - salt, chilli powder, zeera powder, coriander powder, crushed chilli's red, green chilli paste, giner and garlic paste and add 3-4 tomatoes and cook to make a salan.
After cooked, take a handful of moong dal, masoor, urad daals, take 2 handfuls of chana daal and a handful of jowar ka aata. and mix into the chicken.
Fill up the pan with water (almost 10 cups) and cook on medium heat until it starts boiling.
Lower the heat and simmer until chicken seems like its melting.. then separate all the bones and mash the mixture in the pan.
heat some oil and add one onion sliced, brown the onion and use the slices to decorate the haleem when serving. Also use slices ginger, lemon/lime and coriander leaves to garnish!

Really? So then 50g of wheat is only one-fifth of a cup and 25g of daal is only one-tenth a cup???

okey don't be...i v tried different recipes many times...so i m goin to tell u about shaan haleem mix...:) the one that cames with daal...so u just have to add a cup of chanae ki daal extra,and 2 tbsp each masoor, moong, urd(white). thats it.

I just went back and saw the video and the ratios are all wrong... the ratios are as follows
Wheat - 250 gms
moong daal - 125 gms
masoor daal - 125 gms
chanay ki daal - 125 gms
and also missing is yoghurt which chef zakir puts in the chicken korma of haleem I believe its abt 125 gms.
