I am looking to make some new sabzi rather than teh same old baingan-aloo-gobhi-bhindi-palak routine. Last night at the grocery store there was a whole lot of veggies i have never tried and would love to see if they work out with desi cooking. I saw fennels, leeks, rutabagas, artichokes and a variety of others. Any of you tried these and they turn out fine? I guess it doesnt have to be cooked in desi way only so any other experiences can be shared too.
karelay i wont cook unless there is a request from hubs. Arvi i havent tried yet, i havent tried the fresh ones out here but Ammi did and wasnt too impressed by it. I think i will try the frozen one. Do i make the usual masala, put arvi in it and then add imli/lemon juice on top?
I do not have the exact recipe... but if I were to make based on what I remember (making it only couple of times) - the imli-water should be fried with the masalah and then fry the arviyaaN... i am not sure if you might have to put some water for arviyaaN to get tender just like you would do for potatoes.. but from what I remember........ frying them on low flame and then, covering them for a while would do...
It tastes awesome when my ammi cooks it.... I normally have it with ParaThaas in the breakfast :D
Do you like squash, AKA Kaddu or Zucchini? They make good salen. How about bell peppers & potatoes or qeema. Try Lima Beans?
Do you like French Cut green beans, i like that with potatoes again, made desi style with usual masala. Even diced carrots and diced potatoes go well. In my house we eat a LOT of potatoes...jeez.
Actually Karela are very yummy stuffed with beef/daal, or fried with a ton of tomatoes/onions/sliced potatoes...etc.
Asaparagus - Just steam them or in a pan add a few drops olive oil, saute some "halal" bacon and add asparagus, cook for a few secs and serve semi crunchy...or just saute some garlic and add asparagus to it. Very healthy & yummy.
Arugula - Take baby arugula and baby spinach and mix it alone or with field greens and serve with a vinaigreete, can even add grilled chicken, nice n zesty. Also you can wilt arugula with like fettucine in a pasta dish.
Artichokes - I only use canned/bottled artichokes, as its too much work to deal with fresh ones. But you can add to salads, pasta, chop up and add to a spinach dip.
Fennel - check food tv network for great recipes, of sauteed/grilled fennel.
Ira... u can make kofta of zucchini...i have tried those myself... yum... also try fenugreek ...once again..u can make those either with cauliflower or with koftas.... i tried a methi kofta recipe from www.zaiqa.net and it was really good.... bhaigan .... try it in a raita or a achari bhaigan.....cabbage with peas is good too.... green beans and aaloo are great.... zucchini with carrots and chicken is great....
And abt karelay ...they taste awesome if u add them to bhuna ghosht with pyaaz that has been sauteed.... oh yum yum wiht some parathas....btw girls tried this new thing...kneaded aata with yoghurt and warm milk...the rotee and parathas were so soft and awesome....
argula leaves on grilled chicken breast is soooo gooood.... :)
Also u can use spinach and fenugreek (boiled ) and mix into ur parathas...
Some new ideas , have tried and tested.
Water chestnuts ( Singhara in Urdu) in Qeema taste good, do not use whole you have to cut them like you cut alloo.
Grean chick peas ( haray cholay, or in punjabi holay) in Qeema or poola-o of them tastes yummi.
We have also cooked broccli , as gobhi style turned out too good and yummi.

Oh wow guys so many good ideas. We do eat broccoli steamed and asparagus although hubs didnt like it the way i made asparagus last time but i have gotten him hooked on other vegetables. Afro i make a salan/bhujia of mixed fresh veggies and it turns out very good with some dry methi sprinkled in the end for khushboo and flavor.
Zucchini is also good in salan. I saw yellow squash, kind of like a yellow kharbooza yest not sure what that would taste like. I should try.
Sadi can you share recipe for koftay of zucchini? They sound good too.
Mirch: i would have never thought of cooking water chestnuts but now i thin abt it they should work well with keema. Where do i find the green chick peas though? I dont think ihave seen them here.

Water chestnuts stay crunchy still in qeema but taste very good.
I do not know about la la land where you live :) . But now desi store carry green chick peas in their pods , I have seen packaged green chick peas in desi stores too, during the season. You can substitute green lima beans too.
Mirch i live in a small town (USA) and the desi stores have a limited no of vegetables like baingan, karelay, methi, bhindi, etc. But they do have a variety of frozen stuff and i find that they work out just fine too.
It's not really new, and not completely vegetarian, but this uncle I know made awesome mushrooms with beef strips. I'm not big on mushrooms, but they were delicious. He didn't use all sorts of masalas, but just stuck to salt and black pepper...with lots of lemon juice. It wasn't completely chinese, and nor was it too desi. Tasted heavenly with white boiled rice. Yum!
For asparagus, line 'em on a tray drizzle with Olive Oil, salt and any other spice like vegetable spice and bake 'em in the oven. Good to add as a side dish to fish or steak or even chicken.
