*Yeh munh our masoor ki daal *is quite common urdu muhawara, it is said for someone who is bragging. Most likely, The origin of this phrase is in mughal empire or in Haidarabad dakan.
Masoor ki daal ( the orange lentil ) was cooked with so much care and skill, in the palaces by master chefs with top quality ingredients; that dish was considered a part of royal cousines in those days and it was most favorite (vegitarian )dish of many kings dignitaries.
So any chef who wanted to get recognised as a master chef, it was pre-requisite for him to prove that he can make that ‘masoor ki daal’ and impress the dignitaries.
I hanve never heard the second one but the meanign seems to be quite obvious

***Haath kangan ko Aarsi kia ***
kangan and Aarsi are sansikrit words
Kangan is gold bracelet ( mostly ) Aarsi means something delicate, fragile, (glass mirror, drinking glass, bangles etc)
In subcontinent, traditionally girls wear bangles and artificial jewelry before marriage, but after marriage A girl is supposed to wear jewelry made of Gold and other precious metal ( a sign that she is married )
So this mohawara means that once you got gold kangan then immitation jewelry or glass bangles are no more valuable for you.
General meaning : If someone has advanced qualification / skills then he would not be interested in something basic or elementary.

Again in subcontinent, in Mughal time, the most important language was Persian (farsi). It was the official language, language of kings and royalties.
And anyone who wanted to atain a higher post in kingdom then it was pre-requisite for him to polish his persian and make it flawless.
But it was not the language of common folks they used to speak local languages. So anyone who was considered *parha *likha (educated ) it was assumed that he must know farsi very well. Just the same way it is the status of English now in Indo-Pak

as some people are not very familiar with a very cute animal known as donkey :) very hard working and obedient .... but the trait for which it is famous is that he is quite dumb. So It is quite a common observation that if a donkey somehow breaks free from captivity then he is so dumb that he does not know where to go or what to do. So the chances are that it will reach back from where he started :)
Similar is Gwachi Gaa.n (lost cow)
It is an observation that if the cow is lost she also does not know where to go .. so the confusion is visible on her face In India, where cows are sacred, they can block roads and sit where ever they like and no one can touch them

It is related to 'Jooye Sheer Laana" mahaavra...related to Farhaad the Aashiq I think.

Yes terhi kheer mean daunting task more on the lines of ghee terhi ungli se nikalna like some task which needs crooked behaviour or something
Now about the origin, I read in matric grammar book
Once there was a guy cooking kheer (rice custard) a hafiz jee (blind guy) came to see him and following convorsation took place between them :
Hafiz jee : Bhai kia paka rahey ho ?
Guy : Kheer bana raha hoon
Hafiz jee : Bhai kheer kaisi hoti hai ?
Guy : Yaar Kheer sufaid rang ki hoti hai !
Hafiz jee: Bhai ! ye sufaid rang kaisa hota hai ?
Guy : (after thinking ) hmmm yaar sufaid , jaisa bagla hota hia !
Hafiz jee : Bhai ye bagla kaisa hota hia
Now the guy getting a little impatient and still not wanting to offend the bling guy, he tried make bagla with his hands and gestures
so when the blind guy tried to understand the shape of a bagla (seagull) he found it quite difficult so he said :
**"Bhai ye tu kaafi Terhi *kheer *maloom hoti hai ! " **
