Mustard Oil

I love the way sabzees especially methi aloo, baingans etc taste when cooked in mustard oil. Some things just have to be made in mustard oil.

However, there is a proper way of cooking with it, if not then the food tastes bitter.

You have to first heat the oil till it smokes and then cool it…right?

i know that you shouldn’t re-use mustard oil too many times…it gives off this smell and you know it’s not that great anymore. if you have to, it should be like half old oil, half new oil.

My chachi cooks everything in mustard oil as she is allergic to every other type. Her food is amazing.

I have no idea never cooked with mustard oil but I always cook in canola or olive oil.:D

olive oils is awesome too with many things.
and now we use canola oil cuz abbu likes it.

I have heard my great grandmother used to make aaloo ki bhujia with mustard oil...and it used to be too good...
god rest her soul...
though I have never tasted it myself...:)

My mum pickles her achaars in mustard oil. Aam ka achaar, ghajar/mooli, neemki - but oh lord, trying to get those mustard old stains out of any sort of fabric - what a nightmare.

I don't know that she's ever "cooked or fried" anything in mustard oil. I shall suggest she try it.

I've seen mustard oil listed among the ingredient in some desi dishes. I've wondered if it gives the curry a different taste than vegetable oil. How healthy is mustard oil?

mustard oil as far as my knowledge goes, is very healthy. it's a bit fragrant, but not as overpowering as say olive oil, which pure desis would refuse to eat in a salan. if you've kinda grown up eating stuff in mustard oil then you won't mind it too much, but otherwise you'd have to develop a taste for it.

Yes it is very healthy.

In fact nutritionists now say that not sticking to one kind of oil may be better for heart health... use olive for salads, canola for some, mustard for some, and even a bit of ghee for say tarkas is good.

That's interesting. I'm gonna try mixing it up. GHEE??? Ghee is basically shortening right? Is it animal or vegetable shortening? If it's the former, then it's not healthy.

no ghee isn't shortening. it's clarified butter. in moderation it's better than butter.

But mustard oil is such a thick substance .. and leaves this stinky taste in the khana :bummer: … Once I ate at a friends place and she had used mustard oil and I felt that the taste of the oil was way too strong :no:

Olive oil compared to Mustard oil is so much more lighter in both consistency and health wise …
