that's the thing, if you're not used to eating mustard oil, it will smell strong. it's the same way with my dad, he can't eat food cooked in olive oil because he can't stand the smell. it's just a taste you have to develop, but it's certainly worth it, and i think very healthy

I think that mustard oil has a stronger smell than olive oil...I've used both in my hair.
Maybe, mustard oil smells has a less stronger smell when you cook it...cuz you're adding other ingredients. You can't really smell or even taste olive oil when you cook with it (at least I don't).

So what oils are best for what dish?
I love using olive oil for my non-desi dishes...i use canola or vegetable oil for my regular desi dishes...for frying, its exclusively corn oil.... and for baking, vegetable shortening or vegetable oil.
has anyone ever used coconut oil or kalonji ka tail to cook?
i have seen grapeseed oil in big grocery stores...but never considered it for anything?
There's also kalonji ka tail, almond oil, sesame oil, and jasmine oil...are any of those edible?

Some people use mustard oil for cooking anything and everything. At my mom's place, we use it just for special vegetarian dishes (mentioned in my earlier post). On the other hand, my chachi uses it for all her cooking as she is allergic to other oils.
The thing is that you need to know how to use this in terms of quanity and smoking point. It's not like other oils where you can pretty much put onions and spices at room temp and start the cooking process. Here, you have to heat it to a certain temp first.

Sara, I like to use olive oil in salads and pasta dishes.
Canola for regular salans.
Canola for deep frying.
Mustard oil in the dishes mentioned earlier...and also in bihari kabab marinade.
Almond oil and sesame oil are definitely edible .. Actually I hve used Sesame oil occasionally in stir fry’s … and in the naan dough … I also use it on kabab’s and humous sometimes …
Almond oil is used in some recipes , but not something that we desi’s can use it in …
Coconut oil stinks :no: I think the malabar’s in india cook in Coconut oil .. and if its that same oil , then run as soon as you see someone cooking in it ![]()
Never known the purpose of Jasmine oil, though I do look at it with interest everytime i pass it by ![]()

I just asked my Mom about Mustard oil. She told me that she used to cook EVERYTHING in mustard oil many many years ago.
I asked her to tell me how she used it. Basically, you have to heat up the oil until its scalding hot and then splash water on it a few times. Then just make a very small roti (out of normal aata and water) and fry it in that oil. This helps in dissipating the acrid smell/taste off the oil.
Hope that helped. Mom also mentioned that its one of the healthiest oils out there.
