Take a large pot and heat it well .. chuck the shredded carrots in there and keep it on high flame .. stir stir stir … until all the water from the carrots has dried and carrots start sticking to the pan … now add in about one and a half cup whole milk .. cover the pan and let it cook on medium heat … stir every few minutes ..
When the milk dries out , add in about half cup oil , medium heat and start bhooning it … add in crushed cardamom , about 5-6 of them ..
The longer you bhoon , the better the taste … because of the milk the carrots will have softened by now , you just need to make sure they get completely fried that will enhance the taste .. I bhoon for about 30 minutes usually ( first 15 minutes on high heat and last 15 on low/medium heat )
Finally when you see the mixture has released oil , add in the nuts , as many as you like .. give it a good stir , add in sugar to taste .. it will start looking watery as sugar melts … keep bhooning for a few more minutes and finally add in about 8-10 tablespoons of Nido milk little my little .. lower the heat .. mix it all and after about 5 mintues of dum .. its ready to serve …
Masala chips are easy … fry french fries and keep aside .. Use the frozen packet walay , I didnt have them at home so I cut up the potatoes but they become limp .. but for masala chips best fries to use are the frozen ones …
then in a pot heat one tablespoon oil and add in finely chopped onion just two tablespoons, when it browns add in half tsp garlic … then salt to taste ..
throw in 3 chopped green chillies .. and some chat masala .. and one cup of tomato paste ( crush tomatoes in a blender ) .. cook it on low heat , until tomatoes get reduced to a very thick paste … add in handful of fresh corriander .. after a few minutes … take it off the flame and let it cool .. finally add in the french fries and cook this on very high heat for just30 seconds … done !
