I cant believe that in machine age , when we have such a huge choice of blenders and grinders , the ancient manual spice “kootnay” wala little pot and danda still exist :smack:

I see that in most indian households .. they feel the masala doesnt taste the same if its grinded in a machine and so they use the manual kootna process …

you reckon it makes a difference?

simply because the curry made with those home grinded masaalas are much tastier and its pure. :) it tastes even better when grinded in a stone grinder called okhli...we still have it in our villages :)

Not even that CB...I have seen it being sold in fancy gourmet kitchen shops for $50 or so (USD)..insane!

I buy shan masala but since my husband doesn't like whole spices AT ALL I use a coffee grinder that I got from target for $20 and it works perfectly fine...

Believe it or not, some people find the whole process of manual grinding quite therapeutic. I think traditional grinding is fine for folks who aren't into masalas but don't mind grinding couple of whole spices for one particular dish, and traditional gridning is certainly not a desi or Indian thing, in Italy you'd find some people still prefer to make pesto from traditional grinders.

masalas are nothing I have seen people making their bahus peesing meat to make qeema and if the bahu dared to peeso it in machine she would be called nikami !

When I am cooking I also peeso masala by hands ..........btw the thing is called havan dasta.

The mortar and pestle.

Watch bajiascooking channel on youtube. You will see that a lot of folks still like to grind garlic ginger and sabut masalas when they want coarse texture because this way the natural oils of the herbs and spices are releases adding more flavor to the dish.

i still use it… it makes a world of a difference. i actually find it easier than grinding stuff in the blender.. :cb:

I like the mortar and pestle. Using it makes me feel like a witch.

I like to use the old method too, it does make a difference, i hate my chutney all fine, it has to have some substance, so i sit there, cover my face with a duppata (stops the splattering to my eyes) and start pounding away!

its not about masala koting,its shami kabab i never gind, always peesing in kundi/duree and make fresh coriander +zeera+green chill chuttni but i have a prob when i start this my next door OLD WHITE COUPLE they start knocking my wall with danda

we do it in coffee grinder too, only some chutneys are done in the mortar.

My fiancé thinks that food tastes better when the masala is prepared this way. I was just wondering what kind of masala can you make (i use ready made stuff). also what types of pestle and mortar should one buy (metal, stone )?

When you 'kooto' the masala using mortar and pestle, you squeeze the oil of the masala which adds to the fragrance and enhances the taste. Electric grinders dont do that very good.
