Whats the best way to do it? If I thaw the frozen qeema in microwave, most of it gets cooked by the time it melts in micro. When I leave it out in room temp. it takes a long time to melt.

thaw qeema in a luke warm water and make sure to put it in a sealed bag. it'll take 30 minutes at max.
a TIP:
when you freeze qeema next time...make sure the qeema is pressed into a half inch thick slab...that will reduce thawing time.

Most of our meat is from frozen because we are a big family and there is no way we can go all the way to where we buy meat from every few days.
The meat is already in sealed bags when it is in the freezer so when it is removed, as KKF has already said, we put it in a bowl of lukewarm water until it has defrosted.

try to get fresh qeema as and when u need it...qeema usually has a three day code on it! :)

Take it out of the freezer the night before and put it in the fridge. It should be ready in the morning.

I agree with KKF and Stoppit. We always use frozen keema, unless we make it the day we get it. Defrosting it in some water doesn't take too long.

Safety, texture, pleasure are hard to get at the same time when it comes to meat.

My sister reminded me to point out that you should change the water as soon as it becomes cold to keep the defrost process going!

after defrosting, leave it in a strainer for the excess water to drain.

Don’t defrost meat in warm/hot water. Its never safe. I used to do it all the time until my saas told me its not the best procedure to thaw the meat. Now if I have to use water, I use cold water to thaw it. Read this…

Number one way should be to take it out the night before and defrost in the fridge...on the lowest shelf space available so that there is no risk of meat juice dripping on and contaminating anything else as it defrosts....
Second best option would be as Spiral suggested above....COLD WATER, not lukewarm, and change the water often!

Yeah we don’t do it in lukewarm water either…just normal/cold water.
If you are more ‘scheduled’ and know what you are going to make ahead of time then definitely take it out the night before and put it in the fridge.
We rarely know what were are going to make until a couple hours before…hence the defrosting in water ![]()

so once the keema is defrosted and you'e mixed it with meat and stuff....phir kya karte ho? do you run the meat through a processor before adding the seasonings and stuff?
and then, how do you cook it? i never know how much oil to put in the pan and my kababs are always...weird. :(

Last time I cooked kababs they were crisp like cookies but that is a different matter I think which deserves another thread.

I generally know I’m going to be cooking something with chicken or qeema, so I don’t need to know what I’m cooking the night before, I just have to thaw it!
