sandwiches and wraps usually work best. here is what I make for him on Saturdays since that's when I'm not working

you can make the below chicken mixture in advance and freeze it. this is the receipe for enchiladas that I got off of the food network quite a few years ago and have made it my own.

1/4 boneless chicken
handful of frozen corn
1 tomato or 1/4 can of diced tomatoes w/ juice
1/2 small onion finely chopped
1/2 tsp ground cumin and oregano

in a pan fry the onions until they are translucent. Dump the shredded chicken and corn along with salt, crushed red peppers (to your taste) cumin, oregano and tomatoes. Let it sit on low heat for about 10-15 minutes until everything has become soft and sort of mixed into each other.

You can let the above mixture cool and freeze it for later use.

Here is what I do w/ the above. I am sure you can find some other creative ways for it too.

Buy the whole wheat pita pockets, finely shredded Fiesta blend/mexican blend cheese packet, Ortega's taco sauce (I get the mild kind) and sour cream.

take out he mixture from freezer, and let it thaw in the refrigerator or stick it in the microwave for about a minute.

Take the pita pocket, spoon in some taco sauce, add the chicken mixture and top it off with the shredded cheese.
Turn on frying pan on low-med heat, add a little bit of EVOO and "fry" 2 pita pockets at a time. You are just lightly browning them and letting the cheese melt really and not doing any deep frying by any means so feel free to use the Pam spray.

I give him 4 pita pockets and that is enough to keep him stuffed ;-) and my process might seem very long but it is super easy breezy!
