Of course he is free to practice his 'religion', but it doesn't mean it will be accepted or respected by those who see it as a 'cultural' faux-paus. If this guy wants to integrate into American society, he'll adjust to the cultural norms. If he doesn't, then he can expect to be ostracized by many. You can't expect a culture to change to satisfy the pecularities of everybody. Muslims have no history in the development of American culture, it's a bit much to expect people to accept what is considered rude and demeaning. Just as in any culture, there are norms and mores.
Here in Canada, they actually appreciate it once you explain it to them, from what I've seen. If they know that it's not out of disrespect, they don't mind it.
