light snacks menu for guests

I’m having a meeting at my house in a couple days and want to provide some light snacks to everyone at the end. I want to keep things easy and simple for me so I can attend the meeting and then just plate stuff up right at the end without worrying about checking the oven every now and again or things like that. I’m thinking:

Chicken kachoris - I can fry them just before everyone arrives then keep them warm in the oven just before I serve
Mini home-made cheesecakes - I can make them the night before
Fruit juices and tea

I was thinking of one other namkeen and meetha thing perhaps - any ideas?

Re: light snacks menu for guests

Puff pastry patties
Samosas
Spring rolls

etc

Re: light snacks menu for guests

Make sandwiches!

mayo and cucumber sandwiches <3

Re: light snacks menu for guests

samosas and puff pastry are good and you can easily make them ahead of time.

veggies and dip

fruit salad

cheese and crackers

chana chaat

...also please share you mini cheesecake recipe! :)

Re: light snacks menu for guests

I second Hadeel's idea make cucumber sandwiches, my ex co-worker made these once for a office party they were so refreshing and actually tasty.

Re: light snacks menu for guests

You already have kachoris on the menu which is basically a stuffed and fried pastry, so don't repeat another stuffed pasty such as samosas, etc. Instead you can do chana chaat and cookies (as you already have cake). Or instead of chaat, you can do sandwiches or shami kababs/cutlets for namkeen item.

Re: light snacks menu for guests

Sandwiches, cutlets or shami kabab.Meetha can be coffee delight, it's very easy n posted in my thread relished feasts. Or u can make simple trifle/ chocolate pudding

Re: light snacks menu for guests

thanks guys

sandwiches are good but problem is they're mostly aunties so unless it's deep-fat fried I don't think they'd be interested in sandwiches (esp. cucumber lol!)

yeah I was thinking samosay and pastry, but I agree with RV kachori's are already like a pastry thing so not good having another one

I was thinking chana chaat.... but I don't know how to make it!!!!!! also, I was kinda thinking finger food so they wouldn't have to use plates and spoons for things like chaat or fruit salad

hmmm... it's tomorrow morning...

Re: light snacks menu for guests

Make grilled chapli kabobs?

light snacks menu for guests

Would aunties like mini cheesecakes?

Re: light snacks menu for guests

Fruit kebabs. Slice up pieces of fruit and put them through skewers.

Re: light snacks menu for guests

I think this meeting has already done. Has not she written in 21st march post that its tomorrow morning?

Re: light snacks menu for guests

doesn't matter if it's done or not.....the thread can remain for ideas.

Re: light snacks menu for guests

Thanks for all the suggestions guys. This is what I made in the end:

Chicken kachoris

Chicken bread

Double choc chip and walnut brownies and vanilla and strawberry cheesecake

Everything out on the table

Aunties loved it lol - they said I am very sughar (had to ask my saas what that means lol)

Anyways thanks for suggestions - and RV thanks so much for the channa chaat recipe I didn’t have all the ingredients to make it but will make it in future it seems so easy!

Mini Cheesecake recipe:

NB: I rarely measure when I bake so I will tell you andazay se...sorry!

Crush digestive biscuits in a plastic bag with a rolling pin, and add enough melted butter to combine the mixture together. Push down in mini-cupcake tray and bake in a moderate oven for about 5 mins or until set.

Beat cream cheese (e.g. philidelphia) with a spoon until soft. Add caster sugar/icing sugar to taste - maybe 1/4 sugar:cream cheese mixture. Then add a beaten egg or two to the mixture to make it soft, and a couple of drops of vanilla extract. Pour onto the biscuit layer and bake in the oven for about 15 mins until the cheese is springy.

To make the swirls, I just took a quarter of the cream cheese mixture out (BEFORE ADDING THE VANILLA) and mixed a spoonful of raspberry jam into it, then added some red food colour to make it look prettier. Then layer the two cheese mixtures onto your biscuit base - starting with the vanilla, then a teaspoon of the raspberry, and finally a small dollop of the vanilla mixture on top. Then get a skewer and swirl it around to make pretty shapes.

It's so easy and they're a big hit - everyone was asking me the recipe of them after my meeting too!
