I did some "tukkas" last evening with the quantity of ingredients. It didn't have the "shakal" my mom's made chutney has but it tasted almost right. Here is how I made it.
20 whole red chillies (boiled)
6 garlic cloves (lehsan)
3 full teaspoon tamarind pulp (imli)
1/4 teaspoon cumin seeds (zeera)
1/8 teaspoon salt
1/4 cup water.
jab ban jaaye to mujeh bataaiyegaa recipe...lafhsun mirch kii chaTnii kaa joR besan kii roTii se nihaayat hii umda hotaa hai koi lauTaa de mire beete huye din jab ham shab o roz yehii khaayaa karte the :)
Oh I didn't know that. What lowers the cholesterol? Besan? My mom makes the roti like parathas. Really cooks them with oil. So they are pretty heavy but yummy.

when i was a kid in my village...almost everyday we wud spread lahsun kii chaTnii on the bread and have it for a healthy snack :)**
**we, also used to have chapaatii roll with pure sarsoN kaa tel on it with ground black pepper, a pinch of salt and ground podina [mint]...its was so yummmy!
i wanna tell you what happened on my last day of the my last visit to India. i was ready to leave home to catch a overnight train to Delhi to take my flight back to Toronto. we're talking and then all of a sudden i remembered that i didn't have this chapaatii roll on my this trip. my neice sprang into action...she made 5 rolls. i had 2 right there and took 3 for the train journey. i had it for breakfast on the train the next morning just b4 arriving into Delhi...i loved it...i gave a thousand rupees to my neice for her quick thought to make rolls for me :)

You mention so many different foods that I have never heard of. I know Lucknowi people are famous for their variety of food. You know what you should do open up your own thread & post Lucknowi food recipes. Something similar to what Bint e Adam does. I bet so many ladies are gonna praise you a lot.
