Add one teaspoon vinegar in the keema and keep it aside for 10 minutes .. then give it a quick water wash , drain and keep aside .
Chop two medium sized onions finely. Keep aside.
In a pot, boil two cup water , add keema and the onions … put it on medium flame , cover and let it cook. after 10 minutes add the kharay masalay ( two to three cloves, whole black pepper, cinammon bark) … when the water dries out totally …
Add some oil into the keema and start bhuno’ing it … on high flame .. five minutes later add the chopped garlic ( one teaspoon) … keep bhuno it .. then add one teaspoon ginger … continue to bhuno for 10 minutes … then add your regular masalas’s : salt, red chilli powder , haldi to taste … stir and once the oil separates … add 4 mashed tomatoes in the keema ..cover and let it cook on low fire. ( will take about 15 minutes )
Optional If you wanna add potatoes /capsicum/ peas or any other combination .. add that along with the tomatoes …
**Optional **If you like achari keema , right after adding the tomato paste , add two teaspoon achar gosht shan masala .. or just add one teaspoon of the achar masala from the achar bottle ..
Finally chop some green chillies and lots of fresh cilantro … add that to the kema and cover the pot and let it cook on very low heat for 10 minutes … thats it, its done , enjoy …
If you like your keema slightly runny, add half cup water after adding the tomatoes …
Niki, Did you use beef? Did you add bell peppers at the same as potatoes?
CB have you tried same recipe with chicken qeema, you think vinegar will be needed in that case?
Sumal you dont need to add vinegar for the chicken .... I usually like lemon in my khana , so I just sprinkle a few drops of lemon juice when i add Fresh corriander in the keema at the end ....
Mirch, I think thats hugely possible... my mom makes keema without a single drop of oil ... she just bhoons it in water ... and keema has its natural oil too , which releases if its bhoonoed well ..
That is not oil that is fat. I get extra extra lean qeema. I make them make qeema out of roast beef portion. They charge me an arm and a leg but it is extra extra lean.
I guess we can use some olive oil to bhoonofy it.
