I do the same way
and if you want to make bharay howay karalay, then don't cut them. Fill them with keema, tie them with thread and fry them kinda like dum kababs. You don't need extra onions.

oh and i dont like it too bitter....a lil bit is ok....how can i prevent it from tasting too bitter?

Yes the normal regular masalas you would use for any other salan.
If there is some special ingredient/spice then I don't know about it.

Make sure you peel off the skin nicely, sprinkle and rub good amount of salt on them and leave them for atleast 30 mins. Then give them a nice wash with hands.

**Ji haan, Karelay main bahout sari bemarioun ka elaj hai, jo log karelay ka ziada istamaal kartay hain woh khoob sehetmund aur lamby zindagi basr kartay hain "Dr Weil" kay baqoul....:) **

ammi always used to have tandoori parathaas with karelas....yum yum yum....
especially with stuffed karelay...

add few spoon of butter milk or yougert to the karelas in end end when u mix all and put it on dum it wil reduce its bitterness too.and some time i add achar masalas like soonf ,kalonji.little rai,sabit dhania to it also it will tase great too.and add lot of sliced onions too when u put it on dum.and yeh add anardana to it too.it will give it good tatse and reduce bitterness too.

yes....i do that too...add some milk and yogurt at the end,when i add a lot of sliced onions...it really reduces the bitterness....
haven't ever tried the achaar masalas though....but it sounds nice...i'll try it out...
ok...i have to get some karelaas now...yum yum yum...
