Kashmiri Chai

Pleasssssseeeee do not move this to life2. We can talk about the health benefits of Kashmiri chai, if there are any. :rotato:

Okay, I need some info on this chai from all those who reside in the States. Where do you get it? The indian store does not carry them, but I heard that chinese stores do, and its called “gunpowder green tea”.

Is Kasmiri chai a type of green tea? And why is it pink?

Uhm i think desi chinese king in nyc offers it… any decent desi restaurants hud be offering it..

Is it because of the baking soda that gets added in when preparing the tea?

uhhh i dunno, my mom just puts the tea patay and then water and then milk, theres no baking soda involvedhere..

yes it gets pink because of baking soda. its so good but it takes forever to make it.

From wot i know, there are 3 types of Kashmiri teas...the favourite one being kahva **(or kehvi), the leaves they use to make this are called green tea and this is made without milk...the other two are salt teas, one i think is called **shirchai, these are the ones that use baking soda...if this tea is made properly then it is supposed to be pink and this one is with milk...all kashmiri teas are good for digestion and also taste yummy!

With the salty teas, if ur colour doesn’t end up being like bright pink even after u added milk (some ppl use half ‘n’ half cream) then it mite be bcos u used too many tea leaves…

Oh and if u didn’t add any sugar but it still tastes sweet and has a dull pinkish colour, then u probably used too much baking soda…

Kahva is easier to make, a relative of ours just uses Lipton's green label loose tea (they mite come in bags too) which u can get at asian shops even in America...not sure if there is a brand just especially for "kashmiri chai" since i don't really go to these shops myself...

Ingredients for 4 ppl:

Water 5 1/2 cups
Kahva (green tea, lipton) 2 tsp
Almond powder 1 - 2 TBS
Saffron 6 strands
Sugar 5 tsp, or how many u prefer
Cinnamon powder 1/2 tsp
Green Cardamom powder 1/2 tsp (not sure wot this is!)

Boil the water with the green cardamom powder, sugar & cinnamon for about 10 minutes, it will be a brownish colour with a lovely smell...then add the tea, take it away from the heat and let it brew standing for about 3 minutes...after pouring into cups, add the almond powder.

I remember being little and when we were feeling under the weather my Mum wud make us Kahva using ready-made teabags from a Pakistani shop in London...but sorry can't tell u where u can get this from, i haven't had it myself in ages...now i feel like having some...:D

This is the recipe for the salty tea if anyone needs it...

Ingredients:
Bicarbonate Soda 1/2 tsp
Whole milk (or half 'n' half) 1 pint
Water 9 cups
Salt to taste
Fresh cream (malai) 6 TBS
Grinded Pistachios 2 TBS
Green Cardamom 15 - 20 seeds & Ground Cardamom 1/2 tsp
Semi-fermented tea leaves (eg. Oolong) 2 TBS
*optional ingredients include: Poppy seeds 1 tsp, Peppercorns 2, fresh slice Ginger and Cinnamon bark 2 pieces.

Boil this in large pan...add tea leaves to the water with the salt, Green Cardamom and Bicarbonate Soda...next, reduce the heat and simmer anywhere from 20 - 45 minutes or until it reduces its' size to about 1/3 of the original quantity...whilst it is boiling u may add the optional ingredients and about 2- 3 cups of cold water or how much is needed to make enough tea for 4 cups...simmer for about 5 more minutes then take off the heat, strain and let it stand...then boil the milk with Ground Cardamom on low heat...then pour the prepared tea into the milk and bring to boil, add some salt then just simmer for about 4 minutes on low heat...after removing, pour into cups and now u can add the cream (malai) and pistachio powder over them.

pheww! It's long and a little complicated but supposed to be really good :)

isnt that called sabaz chai too..? atleast that’s what i got when i ordered kashimiri chai in pakistan..i think we have a BIG bottle of the tea..we brought it along from pakistan..:yummy:
