Whose going to share an awesome recipe of Kari pakora please?

Going to make it today, want to try out a different recipe , thought I will ask all the nice peeps here :slight_smile:

1 cup besan, 1 chopped medium sized onion, 1teaspoon each of salt; zeera; red chilli powder; baking powder , a handful chopped green corriander & 3-4 chopped green chillies .
Add water as required and mix. Then fry.

kari very simple, make pakoras in very small size bc who bad mei phool jai gay, keep them aside, fry onions till golden brown add tomatoes n fry for a while. in blender add 1 bowl yougart wth 2 to 3 tbsp. besan, onion and tomato paste and blend it into smooth paste. add this in the pan and add water according to required consistency add salt, red chilli powder and turmeric powder, once water start boiling add pakoras in it, and then let it simmer for a while for some time. In a separate pan prepare for tarka, fry onions, zeera and curry pata, just before serving add this over curry and cover for 5 mins and then serve either wth boiled rice or naan

4 cups yogurt ( I prefer yogurt that is 2-3 days old, not fresh)
4 tbsp besan
1/2 - 1 cup water

Mix well into a thin lassi consistency

Fry thinly sliced onion until golden, add a tsp of GG paste, fry, add salt, red chilli powder, haldi powder, a splash of water and cook covered so onion is softened. Now strain the besan lassi and add. Keep stirring and cooking and put on dum once it comes to boil. Meanwhile fry pakoray and add to the gravy. Finish off with tarka of kari patta,whole red chillies and zeera and sprinkle garam masala while serving. I love it with white rice !

I add in red chilli powder and salt plus 1/4th of tb spoon in baisan n make it soft…n den fry it on the other side in yougurt i use kutti hui red chilli and salt and if you want to add lehsan 1,2add in it and blend it..i use grinder for avoiding viscosity…well when i fry pakora ..i put them in cold water containing salt(saline water)..and then add these pakora in blended dahi…n den bighar dey dein with sabut red chilli and zeera ka uper…fry them in bilkul thodey se tail mein sabut lal mirch n zeera dal dein n den dahi mein baghar dey dein…done

You can also add some amchoor(dried and ground unripe mangoes) if no sour/old yogurt is available. The older the yogurt the khatti your karri becomes. We also some boiled chickpeas while masala is being bhunofied which tastes so awesome when eaten with plain rice. My youngest brother says that these women try to put besan in every physical form possible in one dish :cb:

DA’s recipe is closest to how I make.. you can check out bajia’s you tube video for instructions. I like her recipes.

Keep in mind that tomatoes came to the Sub-continent circa 1830s!

The simplest way to make kari is 125 grams of gram flour blended with a big onion, (ginger & garlic if you like) 4 tablespoon of turmeric (you can reduce it if you do not like it) salt, red chili powder as you like - 500 grams of yogurt - blended well and then add 1 litre water. Then cook it on high heat and constantly stir it when it boils and then simmer for 2-3 hours.

When done add your pakora or phulki (soaked in water already) to it and then do tarka with kari leaves, garlic and cumin seeds!

Youtube Bajias cooking. I’ve used her kari pakora recipe many times, and it’s very flavorful.

Same here. Blend yoghurt with besan, add chilli powder, turmeric and salt, add close to 1L water with a few curry leaves and let it cook for over 90 min - stir occasionally. On the side, make batter for pakora, if you add finely chopped onion, potatoes and spinach in pakoras make it taste way better; also if you add a tiny pinch of baking soda, it’d give you a better shape. Lastly, tarka like prototype said. Never used tomatoes but wonder what’s that like?

for all those who’ve tried Bajia’s recipe from youtube, do you make any adjustments to the spices and such? because it looks to me like the original recipe might blow off the roof of your mouth with the chili peppers going in left and right – and i’m the kind of person that normally prefers spicy food.
