okay i bought a pck of frozen cut up karelay
and i haev some fresh ones (well only 2).
since ill be theonly one eating it, i can do with a very small portion of it..
Now how do i cook it? the package of the frozen one doesnt give instructions on how to cook it..for the frozen, im uessing u cook it like bhindi (fry it and hten add it to masala)?
with the fresh ones, you can trying making karelay goshta ka salan...
Cut up the karelays minus the stuff inside. sprinkle some salt on them, and let them sit for half hour to an hour or until it starts to release water. Then squeeze out all of the water (this process will reduce the bitterness of the karelays). Then, heat oil in apan, and fry them until they are golden brown.
Then you make the bhuna hua ghosta ka salan (I am sure you know how to make that), and just add the fried karelas in them, and let it cook together for a few minutes.
Karela gosht is deeelicious....prepare bhuna gosht and add fried karelas as Farishta2 has described. Leave on dum for 5 minutes at the end after sprinkling some chopped coriander and green chillis....tastes yummy!
ooh and add lots of chopped onions & tomatoes in the simmer (dumm) part.....so yummy.....
i also LOVE potatoes with karela, even added to karela gosht.....delish
Depends on how you want to eat it. I mean, would you like it to eat with gosht or qeema? I don't know the karele and daal recipe, so cannot help there.
But here's how I make karele qeema:
1- Deep fry the karele until they are golden brown on a medium flame. If they are greenish, they will be bitter. And if they are too brown, again they will be bitter:)
2- Cook the qeema, you can use your own recipe(I can give mine if you care for it).
3- Once the qeema is done, add fried karely to it. Add more tomatoes and chopped onions.(I mean apart from the ones you used for qeema). Then let it simmer for a few minutes. Add green chillies, and green coriander. And there you are. I think the same recipe will be good for gosht.
Silver Falcon, see you have to develop a taste for karela, or else you wont like it. I hated them when I was little, infact I hated almost all veggies, but now since i have developed a taste for them, i love my veggies! :)

but i love karey especially when they stuffed with qeema ..where qeema saalan is made then karely are stuffed with that qeema ka saalan ..bit like somosaz and then they karely are grilled .. oh yea .. saath mein tandoori ki rotii and poodney ki chutney oooper se lassi
once u peel em .. they aint karely any more .. saara zaiqa to khatam ho jaata hai .. they jucy part goes in the bin ..u may aswell cook something else then ..
peel and thinly slice karelas. Soak karelas in salted water for a couple hrs. then wash and dry.
make the keema the way you would normally make it…bhoonify big time lol…more you bhoonify the better it tastes.
while doing that…get a fry pan add a little olive oil and add the thinly sliced karelas. Fry til tender. add to keema.
this is how i recall seeing my mom make it…not 100% sure tho.
NEVER peel karelas! Let them dry a bit before you cut and clean them from inside. Then just shallow fry them and add to keema or any other salan. Keema + Karela combo is the best IMO. You should cook keema the same way you cook it normally and just add fried karelas at the end. It will turn out very tasty!
