I soaked a glass of kaaley cholay last night. Usually I fry some onions, tomatoes, spices and pressure cook the cholay until tender, then simmer until all the water has dried up. Then garnish with lemon juice, dhaniya, green chillies…
Can someone suggest another yummy way of making kaaley cholay (not salan form, but for iftaari snack)??
You can change the amount of ingredients for 1 glass.
1lb Kalay Chanay
water as required
1/4 tablespoon baking soda
3/4 tablespoon salt
1/2 tablespoon crush red peppers
6 tablespoons oil
1 tablespoon cumin powder
1 tablespoon coriender powder
1/4 tablesppoon red chili powder
3/4 cup tamarind juice/pulp (if using pulp lessen the amount into half)
1/4 bunch cilantro/coreinder
4 green chilies chopped
1 tablespoon chaat masala
Soak chana with soda in it the night before cooking.
Throw the water away & rince the chanas once.
In a pan add salt, crushed red peppers, chana & water, enough to soak the chanas.
Bring to boil & let it cook for 2-3 hours or till the water dries up & the chanas get done.
In a pan slightly heat oil & then add cumin powder, coriender powder and red chili powder.
Stir fry it quickly. Make sure you don't cook it too much & burn the masala.
Turn off the heat. Mix it with the chanas & stir fry the mixture for two minutes.
Add tamarind juice, cilantro, green chillies & cook on low medium heat till the raw tamarind smell goes away.
Add chaat masala. Mix. Simmer for another 5 minutes. Kalay chanay are done.

Kaalay chanay are a standard iftari dish for biharis.. haha.
My mom makes it kind of how you do and then she whips up some yogurt, adds a bit of red chili powder, chaat masala and adds on top of the chanay. They taste amazing.

Yeah & in my views it tastes better the next day. My mom experimented for years to come up with this recipe. Its one of our favorite ways to eat any chana chaat. Waisay she would kill me if she found out I posted this recipe online. Lol. Anyways. So how was it? Did you take any pictures? Was it spicy & theeki enough?
Follow Bint_e_Naeem's recipe. But before adding the oil and spices to the channey, add a cubed boiled potato to the oil and spices and fry a few seconds, add some hari mirchain slit lengthwise and stir in, then add all that to the boiled channey. Garnish with hara dhaniya...
