besan = gram flour = chickpea flour = for making pakoras and kaRhi = light yellow = has a earthy smell
all purpose flour = white = maida = for thickening gravies, making cakes, etc. = doesn't have a smell

besan's made of channay ki daal. all purpose flour is maida.
besan's yellow in color and smells like kachi daal. all purpose flour is white or whitish and smells like ata.
besan you make pakoray with. all purpose flour you make cakes with.

you can use it to make your ata more fine to make finer rotis. you can use it to make desi glue. like niksik said you can use it to make gravies. you can use it to make nihari thicker. you can go the long route and make samosay sheets with it.
