Hunter Beef

My husband has been asking me to make this specialty of Pakistan. I don’t know how to make it and i went out to see if Shan Masalas had a masala for it but was unable to find it.

Does anyone have a good and tried recipe for this delicacy???

I have seen it in packet masalas.
Can't remember the brand though.

The shan masla for hunter beef is just blah... my mom tried it once, next time she just made her own marinade...

The chemical name of Kalmi Shora or crystallized salt petre is Potassium Nitrate (type of salt) which gives golden brown colour to hunter beef, in Pakistan it is common available in grocery store, but here may be you can found in desi stores or any international food store.

Roast Cut Beef 1.5-2 kg
2tsp crystalized salt, koasher (spell) salt is kind of same thing
2-3tsp of blk paper
1-1.5tsp of cinamon powder
2tsp of brown sugar
3-4tbsp lemon juice

Dry the beef loaf with a paper towel. Make a paste with the spices and lemon juice. Rub the paste on the beef loaf. Cover in a bowl and leave it in the fridge. Next day take it out, turn it and message the marrinate on the loaf for few mins. Put it back. She said normally people message it for 15 mins or so and reapeat the process for 6-7 days but she just marinated it for couple days.
When you are ready to bake it, take it out, from one corner to another tie it with a thread. Put the loaf in a baking pan. Put any remaining marinate in the pan, not on the loaf. Then take 2 cups of water and pour it in the baking pan, not the loaf. She said if you have some sort of broath you can subsitute that with water but just make sure it is not to muck salty or ou can dilute one cup of broath with one cup of water. Then bake it in the owen n 350 for about 2.5-3 hours or when you see there is no more liquid in the pan. When done, take it out and leave it for 5 mins or so. After 5 mins, cut the string and slice it.

could u please specify what kind / part of beef is required for that , and that it has to be boneless or with bone ?

It has to be boneless, just ask the boucher (spell) that you want meat loaf for roast.

Here is how my mom does it.
Roast beef 4-5 lbs piece. (marbelled with fat has more flavour)
Salt a little more than to taste
WHole black pepper 1 tbsp
Ginger whole- 3 inch piece
Garlic- 10-12 cloves
Cinnamon stick- 1 inch
4-5 cloves
Star anise whole- 2-3
All spice whole- 1/2 tsp
White vinegar- 2 cups
Brown sugar- 2 tbsp
Water- enough to cover the roast and above by a hand (8-10 inches)

Add all the ingredients to a pot and let it come to a simmer. Put a lid, lower the heat to low and let it cook for 6-8 hours. THe liquid will nearly all evaporate- discard the remnants of the seasonings.
Slice the beef at a diagonal and serve hot or cold or to add more zing- lightly saute/fry it in a bit of oil.

Here is my input. Close to manomano

Roast Beef 4 - 6 lbs
Salt - about 1-2 as per your taste
Brown Sugar - 1 cup
Kalmi Shoray ( its a very important ingredient - if anyone had Hanifia Hunter Beef in Karachi - That color is due to this ) - 1 cup

BASIC : RUB the spices on the meat. Poke it with a big fork all over. Turn the meat and repeat process. 7 days.. do this excercise and keep the meat in the fridge. Put inside Oven at 350 covered with aluminum foil. Should not take more than 2-4 hours to become extremely tender.

TWIST : Pour Vinegar 3 cups on the meat. With the above spieces add Ginger paste 2 tbsp + 2 tbsp All Spice Powder + 1 Tsp Garam Masala .. do the rubbing and poking part as stated above for atleast 7 days.

The UNIQUE attribute with this recipe is the COLOR of the meat. It will not loose its Natural RED color. serve it Cold + Hot + Pan Fried Crispy. Love it

Kulmi shora is THEEE essential ingredient. It's primary function is to drain out the water from the beef so that once it is cooked, the beef can be used for weeks without going bad. If the kulmi shora is omitted, then it'll be like any other roast beef and not hunter's beef.
