I did give them the fair share of what they all deserved … in the three years that i was there , we had no more then just 12% employee turnover rate ! that was one huge success

It seems as though nobody commenting here as actually waited tables or worked in or owned a food service establishment. I have. So here is how it is in America:
Waitstaff are paid slightly less than minimum wage, because it is the custom here to tip waitstaff. If the place has buspeople, the waiter/waitresses will share 20% of their tips with them. A good busser makes the waitperson's job easier & helps to make happier customers and bigger tips. Often shifts are short, so they don't really have a full time job.
If it is a slow day, they all work less, and earn less tips; if it's a busy day, maybe they make more because they are serving more people (but maybe not proportionately more because they can't provide the best service if they're too busy): that is the economic justice of the tipping system. Think of it as production bonuses.
You people who have salaried jobs and a slow day: is your income impacted? Probably not. And your compensation is built in to your salary.
Some of you get year-end bonuses or commissions on sales: waiter's tips are the same thing.
For a restaurant owner, wages are a huge expense, make-or-break actually, even with waitstaff hourly wages so low. If you want them to give the waitstaff higher wages, they will have to raise their menu prices: are you willing to pay more?
I don't believe in adding the gratuity to the bill except in cases of large parties (8 or more). Working a large table is much harder work, and if one or two of the people there (if it's a split ticket) don't put on a decent tip, the waitperson is getting cheated. Sometimes it can be a misunderstanding about who is covering the tip, so it is better to have the gratuity included in such cases.
I don't tip the hairdresser because that custom stems from the time when ladies' hairdressers were their maids doing an extra service. I don't look at hair stylists as servants -- I consider them professionals who set their own prices.
Thank you for bringing in the staff perspective. You've said pretty much all the things that I was trying to say in general business terms. Although I haven't worked in a food service staff position, I've had friends and family who have, and listened to their stories - so I know it's a really demanding and yet unthankful line of work.

I do hate it when an automatic gratuity is added to your bill - in some restaurants its as high as 18% to 20%.

I tip pretty decent, only because I know that importance of it from the recipient point of view. I used to park cars, valet .. and was getting minimum hourly rate and was working for tips, mainly.
To my hairdresser, I pay about 33 percent (they charge $15, I give them 20 dollar bill). in restaurants, I always round off the figure to next 10 or 15 .. so if the bill is $33.23 .. my tip would be such that my total will become $40.00. Higher the bill, bigger the rounding off would be in my case.

oh but you know I have seen the difference in tipping amount if the recipient is a guy or a girl.
For guys - usually they do get a better tip than women in same profession. I am guilty of discriminating :( (before that is - not any more)
For example:
Haircut - if a woman is doing a haircut - they get $3
but if it was a guy then it would be $5... (This was in my college day - but now I tip them both equally).
My theory was simple at that time - A MAN has to SHARE that $5 bucks with his family and responsibilities - be it girlfriend whatever... BUT a girl does NOT have to SHARE. They get to keep it for themselves!
So that's why the discrimination.
... and seriously I never mind that a guy in my profession gets MORE pay than me - because he has THAT MANY MORE latched on to him. He NEVER gets to keep the entire amount to himself.

I know I shouldn't be generalizing, because each situation is different.
I know I was only tipping discriminatorily based on a fairy tale situation... meaning girls don't have that many responsibilities...
I know I was wrong.... I have corrected myself... and tip girls fairly too now:)

Okay so me and hubby went for lunch at a restaurant here.
Food was good but service was CRAP. So incredibly slow, the waitress showed up maybe twice, rest of the times we relied on busboys for whatever we needed. i mean we had to ask like 8 times for a glass of water before we could get any.
Bill comes, i left 50 cents tip. And i wrote on teh receipt: "For increidbly SLOW SERVICE".
Not like ill be going back there :D
