How do you stop biryani from stick to the bottom of the pan??

Salam everyone,

I just wanted everyones tips and ways that they avoid biryani from sticking to the bottom of the pot/handi/saucepan. I have tried ptting the butter in first then the rice and changed it around by putting the qurma/salan in first but either way i end up wasting alot of either rice or salan/qurma at the bottom of the dish after the dum.

Yeah, the heat should be lower. Your goal is to 'dum' the biryani - kind of steam it, not cook it with more heat. I always preheat the oven to 350 F then let the biryani sit in it for 5 minutes, then I turn the heat off.

Also, when layering, I put the salan portion first, especially the oil. And spread the oil around on the bottom of the pan.

are u simmering it on stove or in the oven? i do my biryani in the oven in a really thick, covered oven pan, with no foiling at 400 F for around 30 mins but i keep checking meanwhile. and it never sticks. but if done on stove then i think it does stick and rice doesn't come off that nicely. Contrary to S-Punk i put rice first but u can try her tip of putting salan first.

I either put a small amount of oil from the cooked meat, or a tiny amount of water, and then rice. I simmer the biryani saucepan on the stove, once I've put the lid on, I put the biryani on a tava, with water on it, on a smaller burner.

I love that bottom of the pot biryani ,pola-o , kitchri , known as khurchan as KKF said above.

Yeah , but please do not burn half of your food, in a passion to eat or feed khurchan to khurchan lovers.

in the last stages, my Bhabhi heats the pot from the top [grill on low heat for about 10 minutes] in the oven...it works!

Putting it on a tava and then the burner is a great idea too - I do that with pilao.

I also suggest putting a tawa underneath the pot. Your rice won't stick.

was going to suggest the same thing .... plus add some ghee at the bottom before layering :)

and if u use oven don't use the bake option but use the broil one

^ Can we use the broil option in the oven, even if we are making kachey gosht/chicken ki biryani? Just wondering if it will get cooked. I made it last time in the oven, using the bake setting, but it did get burnt a little bit at the bottom. And I was making it for a dawat, so couldn't use it the tawa way :(. But I do make it that way only if it's just for a few people, so that works great.

i just simmer in the oven using broil opt. the gravy /salan i cook on stove and boil rice on stove too. the oven i just use for dum. so doesn't matter its ghost or chicken both ways it comes out pretty nice and the meat is quite tender. also the rice comes out quite large and plump rather than on stove where rice gets squishy. My minimum is 5 cups of rice for biryani and max is 10 cups and i never went back to stove once i got hold of oven method.

How do you make biryani in the oven? I'm quite satisfied with the way I make biryani now...b.ut I'd like to know more ways of making it....

I think it's difficult to cook biryani start to finish in the oven, unless you're making it with uncooked meat (I've never done that, nor have I ate any cooked that way). The oven method works best when you want to give 'dum' to the biryani. So basically, after you're done layering - pop the tray/whatever (covered) in a warm oven for 15-20 minutes I'd say...and you have lovely 'dum'-ing.
