Help please . I need a tried and tested recipe of home made nihari masala , that can be my replacement for the Shan Nihari masala :biggthumb:

I grind chili flakes, fennel seeds, cinnamon, cloves, black pepper, mace, nutmeg for Nihari. Use half the spice in the beginning and half spice one hour before it is cooked when you are adding the flour. If you add bones in with tendons that get gelatinous would make it taste heavenly. I saute meat only with loads of ginger and no garlic and ten cook in the oven with a very tight seal. My Nihari is world famous.

Add pipli as well - the long pepper - the secret in Nihari as invented for the breakfast of mughal emperor.

The best Nihari in Karachi was from Malik Restaurant, we never use dhania, jeera, Haldi in Nihari which will just make it into an ordinary salan. For quantities I would say two tablespoons of Chilli flakes, two tablespoons of fennel, 7 to 8 cloves, one and half stick of cinnamon, quarter tea spoon of jaifal and jawetri. This lady does not know Nihari.

Yea you may be right! I have tried many different recipes but nothing come close to Javaid or as you say Malik Nihari. Some would have been very close but not exact.

But for a good nihari, pipli is probably a must ingredient. Pipli was one of the main spices in India before the Portuguese brought red chilli/green chilli/chilli paper.

Here is another one claim to be authentic:

By they all these restaurants cook nihari in fat of the meat and they do not use any kind of oil.

You are right about the fat, nothing tastes better than animal fat> I didn’t know about Pipli, thanks for educating me, next time I am in an Indian store, I will look for it.

That must be after my time, We used to get from Malik on Burns Road. People would leave their pots the night before in a line and he used to be sold out by 7 am.

Friends of my friends used to be the Ghundas of the area, I remember Mullah Mohsin who got killed by a Kassai and Mullah Aslam who works in customs now and another couple of guys got hanged by the Military Govt. Due to our connections, we used to get the choicest meat for free from Malik. Sabris Nihari was to cater to punjabis and pathans. Where is Javeds located.. My BFF from Karachi is visiting us they own Bonanza...I will ask him. He was my connection to the underbelly of Karachi.

Javed is in FB Area. In my childhood there was another nihari in Lalukhet - bhoray khan ki nihari - so yummy!

Yes you can get it from an Indian Store - it is called Long Pepper as well. This brand is available in the UK. Only 2 pieces of these are needed for 1 Kg meat of Nihari

Ingredients for Nihari Spice Mix
5 dry chillis OR 2 tsp. red chilli flakes
2 tsp. fennel seeds
1/2 tsp. black pepper
2 tsp. cumin seeds
2 tsp. coriander seeds
2 cloves
2 green cardamom
1 black cardamom
1 inch cinnamon stick
1 star anise flower
1 bay leaf
1 tsp. red chilli powder
1/4 tsp. grated nutmeg
1 tsp. kashmiri chilli powder
1 tsp. garam masala
1/2 tsp.turmeric powder

This can be done up to2 months in advance and stored in an airtight container and used gradually as needed. The recipe makes 4 tbsp. of spice powder.

Put the first 11 from the spice ingredients onto a non-stick pan and roast for a few minutes over a low flame until the spices are fragrant. Do not let them colour or burn. Grind them into a fine powder. Then add the remaining 5 ingredients from the same list and mix everything well.

Grind fennel seeds, jeera, green cardamom, black cardamom, cloves, black pepper, bay leave, cinnamon stick and ginger

All these a must

Rest of the spices are optional

I add small amount of garlic and some ginger when boiling the meat

And use red chilli when bhoon frying the meat

I saw them at the Indian store but a pack was 7.99 and for one time only I was not going to spend that much. thank you for introducing something new to me.

Quite expensive there - probably due to high transportation cost to the far off Alberta! Here I got it for less £2.00!
