Lemon Cheesecake
Delicate and mouthwatering cheesecake that requires lots of patience.
**Ingredients: **
90g sweet shortbread biscuits
1/2 cup ground almond
50g butter (unsalted)
600g cream cheese
1 cup sugar
3/4 cup sour cream
5 or 6 eggs
1 tbs lemon rind (finely grated)
Preheat the oven to 140°.For the base, place the shortbread biscuits in a food processor and process util smooth. Place in a mixing bowl, add ground almond and butter, and mix to combine using an electric or hand mixer. Press the mixture over the base of a 9 inch round springform pan and refrigerate for at least 6 hours.
To make the topping, place the cream cheese, sugar and sour cream in a bowl and mix using an electric mixer until smooth. Then add the eggs and lemon rind and mix until well combined.
Pour the topping over the base in the pan and bake in the preheated oven for 1 hour or until the topping is just firm to touch. Cool in the tin and slightly paste lemon curd on top before serving.

ahh my mouth was watering just at the sight of that shortbread. the final cheesecake looks just divine! i’m not a big fan of lemon curd, but that looks too good to not devour..

Hareem is there some sort of topping on the cheesecake. Looks like it might be a lemon jelly or is that just how the cake comes out on top?

Hareem, oh my .. I am sooo late but I made your pulao… and my very picky sister loved it. The pulao tasted AMAZING…and not to mention smelled even better.
The only thing I did differently was brown the onions, add the yakhni and then strain the onions (and threw them away) once the water got the brown color.
The saunf in your recipe was a good addition :). Now going to try a few of your other recipes. Also please keep more recipes coming I’m in awe of your culinary skills.

CDG, it’s lemon curd. It gives thw cake this glazed look , you don’t have to use it, it’s something optional. You can make it at home or may buy it from a grocery store.

I usually make a strawberry topping which comes out like that - glossy/glazed.
