Hi, do you know how to roast a whole eggplant? I know eggplant needs to be salted to reduce the bitterness, but I wanted to roast it whole, without cutting it and then salting it.
I saw a recipe on tv, and remember the other steps, but not about roasting a whole eggplant. I’ve tried googling it, but every recipe asks for it to be sliced or diced.
can you help?

Don’t worry…I’ll try to post some easy recipes, though, most winter recipes are time consuming.

Boti Kebab
A fairly easy recipe but you must make the preps a day in advance.
Ingredients:
1 lb boneless mutton (cubed)
1 tbs papaya paste
1 tbs plain yoghurt
2 crushed garlic cloves
1 tsp salt
1/2 tsp red chili powder
1/4 tsp turmeric powder
1 tsp coriander powder
4 cloves (ground)
1/4 cinnamon powder
a pinch of nutmeg
a pinch of mace
2-3 tsp of cooking oil for glazing
Place the meat in a bowl, add the spices and papaya paste and yoghurt, and leave over night. Use a heavy-duty frying pan or griddle to cook the marinated meat, glaze the pan with oil before placing mutton cubes. Grill from all sides. Coat the cooked meat with remaining oil with a pastry brush and serve with naan bread or rice.
(Do not overcook the meat and leave some moisture in it)
I have kept the spices mild. You can use more red chili powder, although, I believe spices used in big quantities kill the natural flavour of meat.

Yes i have an oven, but not sure what temperature and how much time and method. Like should i prick it all over or just put it in an oven tray whole with nothing on it
