how do people feel about their spouses working in any of the professions mentioned by the OP, where one to one personal dealing is required with clients of opposite gender?

Being a doctor, nurse, or cutting hair shouldn’t be an issue.

Though i wouldn’t be happy if he were a masseuse. (b/c most people dont like to bring their work home. :()
