meat industry is just like any other so the workers are entitled to get at least one day a week off.
also, the way the “on-the-street” meat industry is operated, you need one day a week to clean/disinfect it thoroughly and to dispose off/incinerate scrap meat.

Not everyone would buy meat in advance to cook on off days. Its consumer behavior that reduce consumption because of off days.
