Awesome.Thanks Khatti.It does sound decadent as compared to regular mac n cheese.
On a side note,do you have a tried and tested recipe for alfredo sauce?I googled for fettuccine alfredo and lots come up,not sure which one to try.

We are having a thanksgiving potluck with some friends here. It was actually planned by the husbands and guess what my husband volunteered me to make? Yah, he volunteered me to make the turkey! I have never made turkey before!! He just assumed since I’m the oldest from the other girls here I should take on that responsibility! So I’m making turkey, gravy, stuffing and maybe dessert. Lately I have been wanting tiramisu badly…don’t think it’s really a thanksgiving dessert but who cares! I don’t think we are going for authenticity here.

I have been looking up different turkey recipes (western style not tandoori turkey lol), and they all seem pretty straightforward. I found a great site that gives tips on getting the juiciest, most delicious turkey! Wish me luck guys…I can’t screw this up. That would be a royal embarrassment!

Here’s my recipe for roasted chicken:

I use the following spice blend:

after washing your whole chicken (skin left on!!), pat dry with paper towels. I use a roasting pan that has the rack so that the chicken doesn’t sit directly on the bottom. Put the chicken breast side up. Using your fingers, gently loosen the skin so that you can get in to sprinkle the spice directly on the meat. Be careful not to rip the skin off! I try to get as much of the spice as i can evenly over the breast part and then down into the drumsticks. When that’s done, I sprinkle the spice all over the outside skin as well, over the whole bird. Cut a lemon in half and stick both halves inside the cavity. You can do the same with an onion as well.

I then “truss” the chicken, meaning I bring the drumsticks in close to the breast and use a rubber band or kitchen twine to secure them closed. This ensures even browning and keeps the juices locked in.

I roast my chicken in the oven at 375 covered for the first hour (my roasting pan has a lid) and then uncovered for the next hour or so.

This will produce the most succulent roast chicken ever..it’s a fool proof recipe!

You can use any spice mixture you want, I just like this one because it has everything in it and gives a nice little kick…it’s not bland, nor overly masala-y like tandoori.

Another method I use is to finally chop fresh herbs like rosemary, thyme, dill, garlic and then some powdered cumin, corriander, and cayenne…mixed into butter to make an herbed butter and slather that all over the chicken under and over the skin. It’s a little bit more fattening but also gives excellent results

Those are the basics. There are other regional variations to the menu depending on the part if the country you’re from.

-cut 6 large washed and not peeled potatoes into four equal pices…boil them
-mash the boiled potatoes into small chunks
-add 1/2 spoon salt
-add 125 ml of table cream
-add 250 ml of milk
-add 125 gm melted unsalted butter
-whip it with a spatula until blends into a smooth paste
