Ghar ka dahi ya bahir ka?

My mom makes her dahi at home because she says it tastes better and lasts longer.

Is this true? Who makes dahi at home? Ghar ka dahi is better than store brought? :hmmm:

We make it at home and my mom feels the same. I really don't think that the two can compare, they are different in their own ways and have different textures (or maybe thats just me). For yogurt sauces and chutney's I prefer homemade. Although I am not a fan of fruit parfait's but I would think in that case the store bought yogurt would be better.

We make it at home and i love it. For chutney and raita, home made all the way!

Most definitely baaher ka , coz ghar wala never comes out nice and thick :naraz:

not true..u need to skim the milk (boil and remove all malai) and do the ‘jaag’ when the milk is still warm…and it is exactly nice and thick..

Always had the ‘ghar’ wala…but nowadays get the ‘koonday wala dahi’ and sometimes the one that is packaged one…the one with gelatin n stuff…

Home dahi because dairy products in Pakistan are really crap. The dahis you find in the market like Nestle etc. are all sweetened and taste nothing like a real yoghurt should taste. Plus no one drinks the delivered milk at home so the only thing we do with it is make dahi or ghee.

Recipe:

For half a litre of milk.

  • Take luke warm milk in a air tight container and mix almost 4-5 tbsp of dahi in it with a spoon. Store in a warm and dry place for almost 6 hrs. The dahi is ready!

is it slimey and ropey? you get that if the milk wasnt heated enough in the first place..

No real recipe, its just like Hadeel said

Boil some milk (once it boils I let it heat on low for awhile) then transfer the milk to the container where you want the yogurt to set. Wait until it gets lukewarm and add a few spoons of yogurt to it. We usually put it in the oven overnight. On a normal or hot day, just put it in the oven as is. But if its a cold day then preheat the oven ever so slightly, turn it off and then put the yogurt in their to set. It should be nice and thick!

just want to add one thing to recipe , dont use store bought yogurt for starter. as they dont have live bacterial culture unless otherwise its specifically mentioned.
i also want to go for home made one but dont have starter. if anyone knows anyother method please share.

queer, mostly it comes out watery and just not thick enough. Maybe a little bit slimey. I'll try heating the milk up longer next time, thanks.

Hah..I remember doing a science project where we had to make dahi at home and take it to school.

My mum makes some real good dahi, I don't know how she does but it turns out perfectly set like processed yoghurts, as in when you dig it out the container with a spoon you get a real scoop, not watery yoghurt.

Honestly, I think the milk might be the difference. We get unprocessed, straight from the cow nipples milk here.

**i LOVED the dahi that i used to buy from the street vendors in my village who came door to door. that dahi was amazingly delicious.

it was like chunks/blobs of dahi floating in maTTha [butter milk] and it was dark brown due to the milk which was cooked on low heat overnight [like 20 hurs]. its was made from buffalo milk [richer...may be around 5% fat]. i still get it when i visit my village. same old taste! :D

here in Canada i use Balkan Yogurt [3.25%] which is thicker and creamier and tastes great! :D**
