Not only brown but dark brown milk....doesnt sound great. My parents would at times buy fresh yogurt in Pakistan but it was always whitesh color.

I think it largely matters what country you live in .. in colder countries , its difficult to get the home made yoghurt … I know when I tried the same recipe in Dubai, it turned out awesome… and when I tried it in the UK … no matter how many times I try , it just comes out slimey ![]()

I like the store bought dahi more.. ghar ka dahi is not too bad either... as long as its dahi i don't mind ;)

CB i had the same problem. drove me nuts. its a very easy fix. trick is to heat your milk to almost boiling. its okay to let it boil even. and let it cool down as slow as you can. the slower you let it cool down, the less slimey and more thick your yogurt will turn out. the high end commercial yogurt companies warm their milk for hours before they let it cool to add the culture.
sliminess is harmless, just looks ick though.. its because some crazy milk protein wasn’t denatured, and when yogurt forms, the protein strands form long slimey threads. heat it for a long enough time and you’ll be fine.

^u might be right but my dahi turns out really really good alhumdollilah and i dont let the boiled milk cool down slowly .... i use the egg beater to mix the dahi/jaag in the milk and once the mixture becomes kinda foamy, i leave the container in the preheated oven for overnight ...

just when the milk starts to boil (it will quickly foam up) take it away from the heat and let it cool. when it's lukewarm add a tbsp of yogurt and stir well.
now, important is that the mixture is kept warm and undisturbed or it will not thicken well. wrap the jar in a blanket and leave it in a warm place overnight.

No real recipe, its just like Hadeel said
Boil some milk (once it boils I let it heat on low for awhile) then transfer the milk to the container where you want the yogurt to set. Wait until it gets lukewarm and add a few spoons of yogurt to it. We usually put it in the oven overnight. On a normal or hot day, just put it in the oven as is. But if its a cold day then preheat the oven ever so slightly, turn it off and then put the yogurt in their to set. It should be nice and thick!
Let me find out what my mom does because she makes awesome dahi too and Ive never seen slimy dahi...in fact I had no idea it could be slimy. It sounds similar to what you've written.
