^ its when the rice is almost cooked, but u need the steam present and the low heat to cook the rice to perfection... I use a tawa bcoz that way, the heat doesn't directly come into contact with the rice, and so it sticks less to the bottom of the pot.
but if you make it w/o tawa then good on you... i just need it bcoz my "andaaza" is set with that :)
