WHat is a good stench free fish to cook? Thats not fry but cook. The lesser the kaantaas the better. I think mum has cooked king fish in the past but us kids found it too smelly. What other fish holds well and is flavourful to cook the desi way?

Tilapia is my favorite.
I generally don't like seafood, but I actually really like tilapia because it is not really fishy and it is very tender.

i second tilapia.
before i left for india, i had also started experimenting with pomfret. i'd tell the chinese guy at the fish shop to cut it into slices. they held well in salan. not too many kaantay either.

My MIL uses it for salans.
My mother uses salmon, which is pretty good too.

Salmon is a cold water fish..is high in Omega 3's..........add Tarragon to eliminate the smell in curry....:)

I too like tilapia, you just don't move it too much, only once or twice flip the side with a flat rice server kind of thing. It won't break then.

yep tilapia.....but as someone mentioned above you can add herbs such a tarragon to get rid of the smell from salmon...salmon is loaded with omega 3's so it's by far the best type of fish to eat.

well ghar mein we have tilapia so maybe i should just use it then. though ammi will insist that we buy smelly whole fish from the korean market. tarragon doesn't go well with desi style cooking does it?

another way that gets rid of fishy smell as rub the fish with mustard oil or lemon before cookng. trust me it works. Also u can use lemon juice.
try catfish, it holds well in salan :)

We stopped using catfish when we flearned that they feed on the garbage at the bottom of the sea
Its been years and years since we got any.
my mum rubs fish with garlic and also dips it in vinegar but I dunno, I can still smell it. Maybe i’ll try lemon next time.

when you say you want to cook it the desi way...do you mean fish salan? because i find fish salan hard to digest ... (because fish should swim in water..not salan)
my sister has this baked salmon recipe that completely rocks, and it calls for ingredients like ginger-garlic paste, vinegar..etc. that makes it quite a desi fish ya know. so salmon is the one...and it comes kanta-free too!
oh and i don't know why...but tilapia reminds me too much of chicken

Well mostly it is thick consistancy of shorba not like aloo gosht shorba...

Oops, sorry didn't see your posting #13.
In that case, sprinkle zeera and salt and haldi over the fish and marinate for a few hours before cooking.
And yes, tilapia is awesome. But use steaks instead of fillets for sturdiness.
