But red snapper has it's own distinct flavor so while it tastes good baked or fried, in curries it conflicts with the taste of the masaalas.

when you say you want to cook it the desi way...do you mean fish salan? because i find fish salan hard to digest ... (because fish should swim in water..not salan) ...
Fish salan doesn't necessarily mean fish in shorba. I don't think fish saalan is normally made in shorba its usually a thick masala which is why I want the fish to hold up well so it doesn't break while stirring the masala, in shorba I doubt I would have that issue.
Dad loves fish salan and its been ages and ages since we made any so I wanna do it for him :) I'm sure he will appreciate it in this cold weather.
MarriedNY do you mean bass fish? so I have bass, tilapia/catfish steaks not filets or then flounder. I'll look for it tomorrow insha Allah. I don't like salmon made any way other than baked with the simplest of spices.
