Extra qeema

So I am cooking qeema today, lekin I used only 3/4 of the defrosted qeema. I don’t want to re-freeze the remaining 1/4. What should I do with it? I could make something for iftaari. Any ideas? No samosas or patties, we’ve have enough already.

this is how i made them two days ago :)

-boil medium sized potatoes...
- mash them and add salt, red chilli powder, zeera, chat masala, hara dhaniya, hari mirch to the mixture...
- make bhoona howa keema with minimum oil in it...
- now make a small ball out of the potato mixture, flatten it, add keema on top with some shredded cheddar cheese, then cover it up with some more potato mixture such that the keema filling remains in the center... if the cheese gets mixed with the potato mixture, it's fine... now dip the cutlet in egg white and cover them with breadcrumbs (i use the italian seasoned ones... yum!)
- shallow fry the cutlets!

That sounds great, I will have to try it. Can you please tell me how many potatoes to use and also approx how much of each spice, and how many cutlets will the recipe yield. Thanks!

ummm i use 8 to 9 medium potatoes... i did not measure the spices but this is approximately how much i use... salt: according to taste, red chilli powder: 1 tsp but again depends on how spicy you like, zeera: 2 tsp, chat masala: 3/4 tsp... this mixture yields around 12 medium sized cutlets...

Bread Rolls

Filling: Kheema, mashed potato, salt, green and/or red chillie (just enough to flavor potatoes as kheema will have its own taste) diced onions coriander leaves. Mix all these ingredients well.

Bread slices
Slightly steam bread slices and roll with rolling pin just to make them a little thin.

Fill the bread with kheema/potatoe fillling and roll like spring rolls. Can be prepared couple of days in advance and store in fridge.

Deep fry.

Tastes lovely crispy and bread does not absorb oil so its got a nice crumby look. Super hit at mosque for iftari today.

Like someone suggested, aloo cutlets are the way to go.

If i cook extra keema, i just freeze the extra bit I dont need and then on a day when I dont have time to cook, Viola, there is already frozen keema that i can take out, defrost and make some pasta.

Oh I remember another nice one you could try out. I make veggie version but I imagine the kheema potatoe filling in above Bread Roll recipe will be fine.

Wagon Wheels

Puff pastry. Flour area on which you are rolling pastry. Roll out into medium thickness in rectangle shape. Spread kheema potato (or veggie or cheese/onion) filling leaving little space all around. Gently roll pastry with filling. Slice medium size rolls which are called wagon wheel. Bake in medium oven about 20 mins. Looks amazing. Also healthier than fry.

PS dont forget to flour the work top before rollin pastry or else it will stick when making the roll. Also dont add a thick layer of filling...it will be easier to roll if thin.
