Re: Easiest dessert recipes!

Amrakhand/shrikhand is an Indian dish that is very easy to make, and tastes great with pooris. Take a can of yogurt (full fat) and empty it in a piece of cotton cloth (I use an unused pillow cover). Make a bundle out of it and hang it above your sink so the water drains away. Keep it like this for 24 hrs to get thick paneer-like strained yogurt.

For shrikhand, mix in finely powered sugar, kesar and ground cardamom till the sugar dissolves (I use my hand blender or whisk). Garnish with crushed pistachios. The consistency should be like soft ice cream, but stickier.
Fo amrakhand, add mango pulp in addition to the above ingredients. Amrakhand is slightly more liquid than shrikhand because of the mango pulp.

Re: Easiest dessert recipes!

Recently I tried and loved the following recipes and they were both very easy and quick to make!

**Baked Fudge **by Ree Drummond

Ingredients
2 whole Eggs
1 cup Sugar
2 Tablespoons (heaping) Cocoa
2 Tablespoons Flour
1/2 cup Butter, Melted
1 teaspoon Vanilla Extract
Preparation Instructions
Preheat oven to 300 to 325 degrees.
Beat eggs until light in color. Beat in sugar until just combined. Add cocoa, flour, melted butter, and vanilla extract. Mix gently until well combined.
Pour batter into four large ramekins or one 8-inch square baking dish. Set ramekins or pan into a larger pan halfway full of water.
Bake 40 to 50 minutes, or until upper crust is crispy and the rest of the batter is firm but not set. Toothpick should come out…not clean, but mixture should not be overly runny. If you pull it out of the oven and have second thoughts, stick it back in for ten more minutes.
Serve with sweetened whipped cream or vanilla ice cream; whatever makes your skirt fly up.

Re: Easiest dessert recipes!

I have a recipe for brownies that has been my go-to recipe for a couple of years now. It’s quite simple, fast (it takes about 45 minutes at the most) and tastes much better than box mixes or shop bought brownies.

**Brownies

Ingredients**

180g dark chocolate, chopped or broken into pieces
180g butter
295g caster sugar
120g flour, sifted
4 eggs
2 tsp vanilla extract

Method

  1. Preheat oven to 160°C/320°F. Line a baking tin with baking paper.

  2. Melt the chocolate and butter over a double boiler.

  3. Whisk the eggs and sugar until fluffy and pale. Stir in the vanilla extract and fold in the sifted flour.

  4. Add the chocolate.

  5. Bake for 30 minutes.

  6. Allow to cool and turn out baked brownies onto a cutting board.
