Re: Easiest dessert recipes!

this is my all-time favorite dessert:

Floating Island

Ingredients:

Meringue
8 egg whites
3/4 c. sugar
Pinch of salt
Custard Sauce
4 egg yolks
1/4 c. sugar
Pinch of salt
2 c. milk
1 tsp. vanilla
1/4 tsp. lemon rind, grated fine
*
Caramel Sauce*
1 c. sugar
1/2 c. water
**
Procedures:**
Boil water in a large pot for poaching.
In a large bowl, beat egg whites and salt until they form soft peaks. Gradually add sugar, while beating continuously, until stiff peaks are formed.
Once the water start to boil, turn the flame down to reduce it to a simmer. Using a large spoon, scoop beaten egg whites and gently slide into simmering water. Poach for about 2 minutes and then turn with a slotted spoon. Poach on other side for another 4 minutes.
Take the poached egg whites out of the water and place on paper towels to drain excess moisture. Set aside and refrigerate until ready to use.
To make the custard sauce, beat the egg yolks slightly then add the sugar and salt. Heat the milk (do not boil) and slowly add to the egg mixture, whisking to prevent yolks from curdling.
Place the custard in a double boiler, stirring constantly until it begins to thicken and coat the back of a spoon. Remove from heat and cool slightly. Add the vanilla and lemon rind. Chill thoroughly until ready to use.
Prepare the caramel sauce by combining sugar and water in a heavy saucepan. Stir well and then heat until sugar turns a golden brown. Do not stir while sugar mixture is boiling to prevent crystallization. Remove from heat and cool slightly.
Serve Floating Island by placing a poached meringue in a pool of custard sauce in a deep dessert plate or bowl. Drizzle with caramel sauce on top using a fork dipped in the golden syrup.
