Apple juice with mint and lemon, really good! Saffron milk with almonds and pistachio’s (childhood fave).

Date Almond Shake
INGREDIENTS
3 cups chilled milk (whole or skimmed)
10 almonds, blanched/peeled and crushed
10 soft dates, deseeded and chopped
1 large scoop vanilla ice-cream
TIP: To blanch/peel almonds, heat some water in a small pan. Once almost boiling, add the almonds into it, turn off the heat and allow the almonds to sit for about 2 minutes. Drain and the peels should easily slide off the almonds when pressed.
INSTRUCTIONS
In a blender, add the dates, crushed almonds and 1 cup of the chilled milk. Blend until the dates are well combined and smooth. Add the remaining milk and vanilla ice-cream. Blend until frothy. Taste and adjust consistency by adding milk to thin the shake or ice-cream to thicken/sweeten it. Serve cold!

Falooda Drink
Serves 3-4
INGREDIENTS
500ml whole or skimmed milk
2 tbsp. sweetened condensed milk (optional)
4 tbsp. evaporated milk (optional)
1 level tsp. corn flour mixed in a bit of water
3-4 tbsp. sugar (bear in mind that ice cream will be added to the drink later so you don’t want it too sweet)
few drops of vanilla essence
few drops red colour
10 almonds, blanched and peeled
some fine vermicelli or rice noodles
1 tsp. tukmalanga seeds (Basil seeds)
1 tbsp. rooh afza/rose syrup
INSTRUCTIONS
Soak the tukmalanga/basil seeds for about an hour, then drain and boil them for 10 minutes or until they are soft. Drain and set aside.
Break the vermicelli or rice noodles into 1 inch pieces then boil like you would pasta, drain and refrigerate to cool.
Put the milk (and the condensed plus evaporated milk if you’re using them…they make the drink richer) in a pan and add the sugar, vanilla and a few drops of red colour…just enough to turn the milk slightly pink. Bring to a simmer, then add the corn flour paste and simmer together on medium heat just until the milk thickens slightly.
Turn off the heat and let the milk come to room temperature. Add the tukmalanga seeds and the vermicelli, and the rose syrup/rooh afza. Chop/grind the nuts finely (save 2-3 for garnishing). Add the chopped nuts into the drink and stir together.
Refrigerate until chilled. Serve with a scoop of vanilla ice-cream (or any ice cream that you like). You can garnish with slivers of blanched almonds, or fruits like grapes. You can even garnish with pieces of colourful jelly.
Drizzle some rose syrup on top and serve!

Mango Lassi
(Serves 2-3)
INGREDIENTS
1 cup mango pulp (or the soft flesh of 1 big peeled/chopped ripe mango)
1 cup fresh plain yoghurt
½ cup chilled/icy milk
½ cup ice-cubes
2-4 tbsp. honey or sugar (or to taste)
2 tbsp. cream (fresh or heavy) (optional)
small pinch of salt
small pinch of cardamom powder (optional)
INSTRUCTIONS
TIP: You can use quarter tsp. of ginger powder instead of cardamom powder for a slightly spicy dimension to the drink.
Put all the ingredients in a blender. Blend until smooth, thick and frothy. Taste and adjust sweetness and flavoring to your preference. You can thin the consistency to suit your liking by adding some extra cold water or milk. I prefer it thick and luscious!! Soooo yummy!
Serve with garnish of either mint leaves or crushed pistachios.

Avocado Shake
Makes 2-3 servings
INGREDIENTS
1 ripe avocado
½ cup ice-cubes
2-3 cups cold milk drop of vanilla essence (optional)
3-4 tbsp sugar, or to taste Vanilla ice-cream - for serving Almond flakes - for garnishing (optional)
TIP: The best avocados to use are those that gently yield to pressure when pressed and are free from dark blotches inside the fruit.
INSTRUCTIONS: Peel the avocado and cut in half. Discard the pit. Cut the soft pulp/fruit into pieces and put in a blender with 1 cup of milk, sugar and vanilla essence. Blend until very creamy and smooth. Add the ice-cubes and blend again. Now taste the avocado shake, if it needs more sugar, you can add it in at this point. Then gradually add more milk to make the shake as thin or as thick as you prefer and blend again to crush the ice cubes. Serve well-chilled in glasses with a scoop of ice-cream in every glass and some almond flakes on top. Enjoy!

It’s a Sharbat alternate in Aftari plus healthier option as well far better than sugary Ruafza ,tang etc

Mint lemonade is easy: Just add water to juicer/blender, add 1-2 limes or lemons, add mint leaves, add sugar, add salt if u wish to. Blend well and serve cool!

We have this in the summers and occasionally for Iftar:

Watermelon Limeade*…from the kitchen of One Perfect Bite courtesy of Emeril LaGasse

Ingredients:
8 cups cubed watermelon (seedless), or 1 quart watermelon juice
1 cup freshly squeezed lime juice
1/2 cup sugar, or more to taste
Lime slices, for garnish (optional)
Directions:
- Place half of watermelon cubes in a blender and process until smooth. Strain through a fine-mesh sieve set over a large bowl; discard solids. Repeat with remaining watermelon cubes. You should end up with about 1 quart of watermelon juice.
- Add lime juice and sugar to watermelon juice, and stir until sugar has dissolved. Taste, and add more sugar if necessary. Transfer limeade to a nonreactive pitcher and refrigerate until thoroughly chilled.
- Serve over ice in tumblers, with lime slices for garnish. Yield: 5 cups.

I usually make shikanjabeen (lemon. salt, sugar, water) and then mix 2/3 of shikanjabeen with 1/3 7up.
It tastes like the desi style lemon soda ![]()
