I think its a fake story related to Jehangir, as he was attached to Noorjehan and some people believe that he was involved in the murder of Noorjehan’s first husband.
I think, its not the question of replacing someone’s love with the other, but whether you can fall in love with someone else with same intensity as first love. Baqol Faraz:

Per toot ke chahna sirf ek baar hota hai

Yes STA, the love for Allah and His prophet is the ultimate stage of love known as Ishq e Haqeeqi and its a fact that when you love Allah you start loving His people and and other creations.
On the other side, Ishq Majazi (love with people) is a way to Ishq e Haqeeqi.

We had male point of view by Ahmed Faraz that love happened time and again, but with less intensity. Now lets know female point of view. Noshi Gilani says:
