I am gonna make samoosas, rolls, beef patties, and bhalay this weekend for ramadan. I saw someone talking about sausage rolls. how do you make those? Thanks!

Ok, I have made some spring rolls and freezed them. Now I am going to make some samosas.

Sausage rolls:

Ready made puff pastry (if u cant get this, look up puff pastry on youtube and there are recipes)

STUFFING
1 kilo Keema
1 teaspoon of salt (or more if u like)
1 large onion finely chopped
Half cup finely chopped Hara Dhania
3 hot chillies finely chopped
1 clove garlic, mashed
Squeeze of lemon juice
1 teaspoon garam masala
1 teaspoon black pepper (ground)
1 teaspoon red chilli flakes
1 teaspoon cornflour
Optional - half cup grated cheese, or 2 tablespoons of cream cheese.

Mix all stuffing ingredients together well with your hands. Roll out the puff pastry into a long rectangle.

Mould some keema mix into a sausage shape and put in the centre of the rectangle. Fold the edges over eachother so u make a long tube of pastry filled with sausage, then cut into small pieces (small sausage rolls). U can brish with milk or beaten egg to make a glaze. Bake in a hot oven (about 220 degrees) for about 15 minutes until cooked.

i also tred making the keema rolls n they turned out gr8, except i got the keema mixed with everything frm the shop, i asked guy to put corriander green chillies onions tomatoes ginger n garlic in it, then just added the salt n garam masala n a bit of paprika powder at home.
to b honest u can add just about anything u want, i like to add mix veg since i cant add cheese.

^ Yes, u can actually put anything in it, whatever u like, as long as its tasty!

I finished making my required quota of keema sausage rolls, salmon puffs, mozarella stuffed jalapeno's last week... BUT... I'm afraid we like them too much and have been eating them since and now the freezer is looking empty again, so im gonna have to make some more.

I dont have a lot of freezer space so i only have keema samosas and aloo rolls frozen so far. Hubs isnt big on iftari items anyways since he likes to eat dinner after iftar so i dont have to make an elaborate spread at iftar.

Yah we always prepare a ton of everything for iftar ahead of Ramadan and freeze it. This way you can cut down kitchen time in Ramadan and have more time and energy for other more important things!

How do you make smoked salmon and cream cheese puffs?

So far we've made keema patties, and shammi kebab. We already keep seekh kebas in the freezer. Just need to make some samosas now.

Smoked salmon and cream cheese puffs:

Rolled out puff pastry.
A chunk of fresh skinless/boneless salmon
A small packet of smoked salmon or trimmings
Cream cheese / Philadelphia
Squeeze of lemon
Teaspoon of cornflour
Ground black pepper, sprinkling of mixed herbs, red chilli flakes, good dose of chopped chives.

Chop salmon into small pieces, mix in enough cream cheese to generously coat the fish, but not so much that it turns too soft / liquid. Add rest of ingredients.

Lay the stuffing in a line on a rectangle of puff pastry and roll over the edges like a sausage roll. Cut into small pieces and bake for about 15 mins at 220 degrees C until cooked.

Don't put salt in unless u r not using smoked salmon.

Isnt that all red meat stuff? Don't u have chicken / fish / vegetarian items?

BTW - to whomsoever suspected frozen stuff doesnt keep - yes it does!!!

Yes we do veg/fish stuff, we also already had aloo patties in the freezer. As for other veg/fish stuff, so far we've just made it on the day. But I think I'll make make the salmon puffs (thanks for the recipie BTW :)), and put them in the freezer.

I made spring rolls, Qeema samosa and aalo samaosa and freeze them.

Hey Rupay, I made your salmon puffs and have put them in the freezer, I'll bake them some time this week, and let you know how they come out :)

I had some filling leftover, so I made them into kebabs, by adding mashed potato, a little mustard and some zeera. I shaped them like shammi kebabs, coated them in egg then breadcrumbs, and fried them on a low heat.

They came out really well, so I thought I'd let you know in case you ever end up with leftover filling.

What's the best method of freezing shami kebabs please? Should they be fried first and then frozen or the other way round? I'm confused! Does it lose the original spicy taste if its frozen? Thanks in advance!

I have always frozen mine without cooking them, just shape and freeze flat. In my experience they have turned out ok when i cook it, no loss of flavour, but thats probably cos i use Shan masala! My husbands friend freezes his shammi kebab mix and then uses it as sandwich filling without frying it, he says it turns out well too.

oh good, i hope they do turn out nice, otherwise i will hang my head in shame and never post another recipe!

Thanks for the fishcake recipe, i will definitely try it bcos i do sometimes have some left over and dont know what to do with it.

You can freeze them either way...unfried or fried. They don't lose any flavory. I would say better is to freeze them unfried and then fry them when you need.

What i'd like to know is, after frying how does everyone's shammi kebab come out smooth, and unbroken?

Mine tend to split a little, or the coating is a little 'grainy'
