What seems like a balanced menu for a dinner accomodating roughly 8 people?
2 of which are not family.
No biryani, nihari, haleem or anything too difficult.

Awesome!
I want to do a chicken item, one meat item, one veggie and rice.
Is that too little? What else?

If it's not a formal dawat, that sounds great. Round it out with the raita, salad and dessert. I would also do a daal. BTW, one of the meat dishes ought be a salan or geela dish.

Do a pulao instead of biryani. You could even make your mom's yakhni pulao.
Then you can do two types of meat dishes (chicken and red meat). For the chicken dish....you can make chicken karahi or a chicken curry. And for the red meat.....you can make kababs. It could even be shami kababs, which are also served during the main course.
Then have a vegetable dish to balance the meat out. It could be cholay or palak. Or even both of them.
Include raita and salad and naan and there you go. Simple menu (IMO).
Main Meal:
Pulao
Chicken Curry
Kababs
Cholay or Palak or both
Sides/Accompaniments:
Raita
Salad
Naan
There you go.
For desert.....if my mom wants to keep it simple ....she'll buy some ice cream and serve in bowls with fresh fruit of the season. It could be strawberries...or even mangoes which are in season now.
Re: Dinner Menu
^RV,does your mom serve fruits separately or just use them for topping?
My suggestion for an ideal menu - and pick whichever dish you like to cook and serve:
Meat 1 (dry)
shammi kebab
chapli kebab
seekh kebab
tandoori chicken
Tikka boti
Meat 2 (Salan)
Chicken/veal karhai
Lamb or chicken korma
Kofta ka salan
Butter chicken
Achaar chicken (not very saucy - so combine with a wet daal)
Veggie
Paneer (palak or matar)
Shahi paneer
Nawratan korma
Bowrai handia (mixed vegetable)
Achaar aloo
Kathal (Jack fruit)
Raita
Boondi ki raita
Eggplant raita
Cucumber raita
Rice
Matar pulao
Veggie biryaani (as difficult as regular biryaani
Zaffrani rice (really simple)
Daal
Maash ki daal
Pachrangi daal
Khatti daal (laal masoor)
Moong-mash ki daal
And of course roti or naan.
And pick any dessert - in fact buy dessert.
I forgot the salad! Have a garden salad and if you want to expend the extra effort, a cold pasta salad - but that's bonus.
for dawats we always cook palak gosht.khali palak nooo

Topping
Re: Dinner Menu
dinner menu:
aloo ki tikiya
chicken kebabs/ or shami kebabs
vegetable rice
roast chicken/ of roast leg
chicken salaan/ or chicken karahi
meat salaan
green chutney
mixed salad
raita
naan
dessert:
kheer or triffle
I'd make a yakhni pulao, lamb leg roast.. smoked chicken qorma.. and achari or dum aloo and masala channay instead of daal.. or even rajma with lots of butter.
Re: Dinner Menu
This all sounds great ladies. When am I invited over for dinner?
